Italian Breakfast Bake

Breakfast is the most important meal of the day, they say. And I’d tend to agree. There is a reason they call it ‘breakfast’ too. The intention is to ‘break the fast’ of not eating overnight while you sleep. With being in the middle of an end of summer heat wave in Texas, I am avoiding my oven like the plague. The only time I’ll even consider using it is first thing in the morning before the heat of the day.

It’s been a while since I had a hot breakfast, so I figured it was about time to tempt the fate of the oven and heat and whip up a nice warm breakfast to enjoy. Homemade Almond Milk

A few years ago, I started to switch more and move over to almond milk. My kiddo isn’t (and has never been) a big fan of milk. Not in her cereal. Not with cookies. Nope. None of that. So with that I began getting almond milk for myself unless there was a specific recipe for which almond milk just wouldn’t work. And trust me when I say that there are some out there.

The problem is that I’m generally the only one in the house that uses any sort of milk at all for anything. And you can’t really buy a small container of almond milk unless it’s some over priced organic or local product. If I buy a half gallon of almond milk the majority of it goes to waste. My solution? Make my own damn almond milk…

Cobb Skewers

Well, all of us girls made it through camping and toobing this weekend. Three of us managed to put an 8 person tent up in all of 15 minutes. I guess the 100 degree heat and blazing Texas sun is one of the best motivators there is. Even being home and in the air conditioned house… I’m still craving cold foods.

These cute little Cobb Skewers have been my cure-all today. They’re cold, crisp, and a great way to enjoy a cobb salad as an appetizer or snack. They’re easy to put together and look pretty impressive. It’s a more ‘fancy-pants’ way to serve a salad as an appetizer anyway…

Melon Caprese Skewers

It’s hot.

While I’m still absolutely refusing to turn my oven on right now, I still need to find creative things to eat without heating up the entire house. These Melon Caprese Skewers are a light and fun twist on a cypress.
