Beef braciole is more than just a dish; it's a culinary adventure that will transport your taste buds straight to the heart of Italy. This traditional Italian favorite never fails to impress with its exquisite flavors and irresistible textures.
At the core of this mouthwatering dish lies thinly sliced beef, prepared with some care to ensure tenderness. But what truly sets beef braciole apart is the cheesy stuffing that takes it to another level. A symphony of breadcrumbs, garlic, Parmesan cheese, and aromatic herbs harmoniously blend together to create a savory sensation that will leave you craving more…
Air Fryer Toasted Ravioli
These Air Fryer Toasted Ravioli are not only easy to make, but they’re pretty damn good too! I took some refrigerated raviolis that happened to be on theme this month, and I decided to see if air frying them would get the same effect as frying or toasting would. And it absolutely does! The ravioli turn out crisp on the outside and melty cheesy on the inside. Perfect for dipping and dunking into your favorite pasta sauce.
They can be served as a pain part of dinner or as a side, snack, or hot appetizer. I lightened them up by using a whole wheat bread crumb and of course by using the air fryer rather than deep frying. I found too, by seasoning the egg mixture rather than the crumb mixture you get a lot more even seasoning and the seasoning is locked in with the breadcrumbs!…
Read MoreHoneycomb Lasagna
I’ve seen this Honeycomb Lasagna trending all over the place and I finally decided it was high time for me to make my own iteration of it. So, this version of the famous Honeycomb Lasagna is healthified. The very first thing I did was to make and use my own meat sauce. And this one right here has to be my favorite. Now, I know the sauce takes a lot of time but I promise that it’s worth it. BUT. You can really use whatever spaghetti sauce that you want, meat sauce or just standard spaghetti sauce.
I liked the meat sauce here because it gave the noodles something hefty to stand upright in. And making the sauce myself means that I got to reduce it down to be as thick and full of flavor as I wanted it…
Read MoreHalloween Antipasto
This Halloween Antipasto is basically a black and orange version of my original Skinny Antipasto Salad. I went with some red lentil and black squid ink pasta for the orange and black colors and also chose some colorful tomatoes that came in a pack with orange and dark ‘blood red’ ones. Black olives were a given. And to break up the colors there’s some fresh mozzarella and cauliflower.
It’s a very easy dish to make that I honestly use as a meal in itself since there’s all the pieces of a complete meal-in-a-bowl. Plus, it can be made ahead of time and also is great as a leftover! Of course, you could also use this in place of pasta salad as a side dish too!…
Read MoreSkinny Orange Creamsicle Italian Soda
It’s America’s birthday and while we’ve got some rain in the forecast, I’m bringing on the sunshine with this Skinny Orange Creamsicle Italian Soda! The first time I had a creamsicle Italian soda was waaaay back when I was just a little brat and my dad worked at the Oregon Coast Aquarium. They made creamsicles and they were always one of my absolute favorite treats when visiting.
This Skinny Orange Creamsicle Italian Soda is more on par with my tastes these days though, with a lot less sugar and still all the deliciousness! It’s creamy and dreamy and orangey goodness that is so crazy simple to make…
Read MoreCaprese Pasta Salad
As it’s getting hotter and hotter outside I’m craving the cold stuff. The lighter stuff. The stuff I don’t have to turn my oven on to enjoy. This Caprese Pasta Salad is just that. Get it started in the morning when it’s cool out and then finish it off in the afternoon or evening as lunch, dinner, or a side for one of the two. The pasta dish itself is based off one of my all time favorites - caprese!
What’s a caprese? Tomatoes, fresh mozzarella, basil, and balsamic vinegar in one form or another. I basically turned that into a light, easy to make salad that includes fresh baby spinach and some pasta to make it just a little more hearty…
