Peanut Butter & Jelly Cookie Cups

These Peanut Butter & Jelly Cookie Cups are my JAM. Hah. Get it? I’m feeling extra punny today apparently. So these cookie cups are similar to one I did back a few months ago, but instead of hazelnut spread I decided to go with PB&J! Because who doesn’t like a good peanut butter and jelly anything? Well, other than the poor folks who are allergic. Which if you are? This obviously isn’t the recipe for you.

Now. These cookie cups start off with a refrigerated peanut butter cookie dough. It’s proportioned and ready to go so it makes life super simple. Just pop the dough into the mini cupcake pans and bake away…

Peanut Butter Cup Snack Mix

Back to school with the kiddo today after the two weeks off for the holidays. And going back to school always means a tighter schedule so it’s always nice to have snacks on hand. This Peanut Butter Cup Snack Mix is one that the whole family can enjoy. There’s a little bit of sweet and a little bit of salty in there, along with varying textures of soft and crunchy; all things that I love about a good snack mix.

Look, I don’t know. I’ve just been on a cookie binge lately I guess. But, I wanted something a little more ever green today than my Irish Cream Chocolate Chip Cookies from last week. Plus, I’m all out of those cookies anyway so it was time to make some fresh. One of my all time favorite cookies? Monster cookies!

PB&J Cinnamon Rolls

Sometimes you just have to put two of your favorite things together. Peas and carrots. Cinnamon and sugar. Peanut butter and jelly. PB&J with cinnamon rolls. These PB&J Cinnamon Rolls put PB&J into cinnamon rolls! That’s right. Peanut butter. Jelly. And cinnamon roll goodness. And after this past week? I could use some of my favorites in my life.

Who knew you could enjoy a PB&J for breakfast? Oh, wait. I did! This Baked PB&J Oatmeal is loosely based on a few of my other baked breakfast oatmeals but in PB&J form. Yep! There’s peanuts, peanut butter, and even jelly baked right into this oatmeal. Plus, I made it dairy-free, gluten-free, and vegetarian.

This Baked PB&J Oatmeal can be made in advance and reheats really well, meaning that it’s perfect for meal prepping and having on hand through the whole week. And, if you aren’t a fan or are allergic to nuts, you can always swap out the peanut butter for any nut free alternative. I don’t know why, but I always go into peanut butter and jelly mode as the summer winds down and back-to-school starts to nip at our heels. What can I say? But, I’m sorry and you’re welcome. These PBJ Brownies are every bit as good as they look. They are the gooiest, most decadent, delicious brownies that I’ve ever had the pleasure of eating.
