Toaster Oven Bacon & Egg Toast

October 4, 2022 Amanda Plott

It’s been a busy start to the week and it’s going to continue being a busy week I think. But, that’s okay! I’ve at least got a breakfast plan with this quick Toaster Oven Bacon & Egg Toast. I’ve had my toaster oven for a couple of years now, but in the past I’ve only ever put it out on the counter and made use of it on rare occasions and I’m starting to see that maybe that was a mistake!

This Toaster Oven Bacon & Egg Toast is super easy to make and I can get it going while I’m getting the kiddo ready for school or doing any number of other things that I do in the early part of the day. This breakfast is as simple as it gets with just three actual ingredients. Bread. Egg. Bacon. That’s it!…

Air Fryer French Toast

July 18, 2022 Amanda Plott

Did you know that you can make french toast in the air fryer? Well, as it turns out, you totally can and it’s super simple and easy to do! And you know what’s better? It only takes is six ingredients and just a few minutes of hands on time! I started this Air Fryer French Toast with some of my favorite whole wheat and multi-grain bread.

French toast is pretty standard across the board, but I did lighten the egg mixture up just a bit by using an unsweetened almond milk instead of cream. Trust me when I say, you won’t notice the simple swap. Other than that, the egg mixture is loaded up with plenty of cinnamon goodness…

These Bacon, Egg & Cheese Breakfast Pockets are surprisingly easy to make, and delicious too. Plus, they’re great to have on hand as a grab-and-go option during the week. You know what that means, they reheat really well with a quick pop into the microwave or toaster oven.

Spinach & Feta Bundt

March 26, 2022 Amanda Plott

I love to play around and shake things up a bit. And more often than not, we all think of a bundt pan as being used for something sweet. This time around I decided to use it for something savory. This Spinach & Feta Bundt could honestly fit into any meal space; breakfast, brunch, lunch, or dinner. And let me just say that this thing is absolutely bursting with flavor. It’s honestly one of the most delicious things I’ve eaten in a good long while.

It’s light, but still filling and has a richness to it with the feta cheese but also the lemon in there to cut through it. It’s really good stuff and it’s absolutely perfect for these few months of Spring. There’s just so much going on here that the only thing you’d really want to serve it with would maybe be a simple soup such as tomato soup!…
