Air-Fryer Homemade Pizza Rolls

June 30, 2022 Amanda Plott

Homemade pizza rolls? Uhm, yes please! When I was a kid, one of my favorite things was pizza rolls. I mean, who doesn’t like little popable bites of pizza goodness? With deciding to have a ‘snack’ food dinner this week, I thought I’d try my hand at making some pizza rolls in the air-fryer. Not just any pizza rolls though, homemade ones!

These Air-Fryer Homemade Pizza Rolls are DELISH and even better than their frozen pre-made brethren. And the best part is that you get to decide what goes into them. Today I went with pepperoni and cheese, simple enough, but you could definitely go with sausage, or any other sort of cheese or meat that you like on your pizza. Veggies are another option too!…

Bacon, Egg & Cheese Breakfast Pockets

June 27, 2022 Amanda Plott

All the breakfast favorites, tucked away inside a pillow pocket of dough. We’re talking bacon, egg, and cheese! These Bacon, Egg & Cheese Breakfast Pockets are surprisingly easy to make, and delicious too. Plus, they’re great to have on hand as a grab-and-go option during the week. You know what that means, they reheat really well with a quick pop into the microwave or toaster oven.

You can feel free to make these your own too. Spice them up with some jalapeño. Swap the bacon for breakfast sausage. Or even change up the cheese used for a favorite or just something you have on hand. No matter which way you go, these things are delish!…

Tofu & Green Onion Wontons + Chili Broth

June 24, 2022 Amanda Plott

Ever made homemade wontons before? You totally should! They’re a little time consuming, but they are super easy to make and delicious too. These Tofu & Green Onion Wontons are meatless and depending on the base of stock you choose for the Chili Broth, they might be completely vegetarian too! The chili broth here doesn’t mess around either. It has a real kick to it. So if you aren’t big on spicy things, you may want to use a plain broth or lessen the amount of spice in here.

The broth here isn’t meant to be a soup, but more of an additional coating of flavor for the wontons to get to roll around in. Trust me, you need the broth here as it really adds a whole lot to the dish! It’s spicy, tangy, and perfect to pair with the neutral wontons themselves…

Baked Buratta

June 21, 2022 Amanda Plott

Let me tell you guys something. I love cheese. It is my weakness. Not ice cream, or cookies, or cake - but cheese. Glorious cheese in just about any form. Sharp, sliced, shredded, fresh, soft, hard, crumbled. Any of it. All of it. I haven’t met a cheese that I don’t like, and I’ve never tried buratta before even though I’ve always wanted to.

Buratta is a pretty cool cheese. It’s basically a creamy spreadable cheese tucked away inside a skin of fresh mozzarella. So when you cut into it, the creamy cheese oozes out and it’s so so good. I didn’t want to have it just all on it’s own, so I decided to make this Baked Buratta. The name is sort of a lie since the buratta itself isn’t baked…

Blueberry Waffles

June 18, 2022 Amanda Plott

I have pretty much been in love with my waffle maker ever since I got it, if you couldn’t tell. I’ve been making all sorts of waffles. Sweet ones, savory ones, some with mixes, others from scratch. I’ve got to say though that these Blueberry Waffles take the cake. They’re made all in one bowl with very real and very simple ingredients that you probably already have on hand.

As I’ve been going through these different kinds of waffles, I’ve been playing around with different amounts and ingredients. These Blueberry Waffles end up being a bit lighter in both color and texture. And the blueberries in there add some texture and just a bit of chew…

Rainbow Soda Cake

June 15, 2022 Amanda Plott

Another continuation of rainbow inspired eats and treats geared towards PRIDE month! This fun and vibrant rainbow cake is made with literally just a handful of ingredients and fairly little hands on time. This cake uses one of the oldest tricks in the book as far as cake mixes go, and that’s simply using sparkling soda with the mix and nothing more!

That’s right. You can make a cake with a box of mix and a can of soda. Pretty impressive, huh? It’s so super easy to do too! Outside of that, you divide the batter and color it accordingly. I went with the rainbow colors of the PRIDE flag, but you can use whatever colors you wish…
