Lightened-Up Giant Cookie Cake

Back when I started all this 'Skinny Fork' madness, my kiddo was just a little 3-year-old tot. Now she's at the end of 6th grade. One thing that hasn't changed through the years, has been that I always, every year for her birthday, make some sort of rainbow funfetti style magic treat.

Chocolate Chunk Banana Bread

I’ve made a lot of banana bread in the past, but I realized that I’d never made one that only had chocolate chunks in it! Not only that, but this one is also made with no egg and no oil! That’s right. This bread is super tasty, easy to make, and good for you too - with well under 300 calories in a huge big thick slice!

This banana bread is as easy to make as one, two, three. Mix the dry stuff. Mix the wet stuff. Combine and bake! It really couldn’t be any easier. Of course, the chocolate chunks are the best part. Irish Cream Chocolate Chip Cookies

As we get closer to March and to St. Patricks’s Day, I thought I would try my hand at making some chocolate chip cookies, but with a little bit of an Irish twist. These cookies here are made with some Irish Cream baked right in. And let me just tell you, they’re so sooo good!

The out edges are browned and have a little crisp to them while the insides are light, moist, and totally fluffy. And there’s just enough Irish Cream in there to get a hint of the flavor without it being over powering. Giant Chocolate Chip Unicorn Cookies

Immediately after I made my last batch of GIANT cookies, my kid was already asking me to make some more. Of course, I didn’t want to do them exactly the same, so today I decided to go with just colorful sprinkles and a variety of chocolate chips. That’s right, a variety. Big, regular, small. Some dark, some semi-sweet.

The end result was some more amazingly delicious GIANT cookies that had something different in every bite. Some bites were full of chocolate, others of sweet candy sprinkles, and then others were a delicious cookie.

Giant Valentine Cookies

Nothing says ‘I love you’ quite like a GIANT cookie. these big cookies are about 4-5 regular sized cookies in ONE. BIG. COOKIE. And do you want to know a secret? They’re made with HALF the amount of sugar as the originals. That’s right, I was able to shave off half the sugar by making a couple of simple swaps.

The first swap that I made was subbing in a brown sugar/stevia blend for the regular brown sugar. I also swapped half of the original sugar for a granulated stevia. the important part here is the granulated part. While you could use any other natural sweetener that measures cup for cup like sugar, I prefer the granulated one since it doesn’t have the usual fake sweetener taste…

I have a cookie monster in my house. …And she comes in the shape of a 10 year old girl. It’s amazing how I bought a huge container of chocolate chip cookies from the store this week and magically 3/4ths of the cookies have disappeared in the matter of just a couple of days.
