So far it seems that I have escaped the making of my chocolate ginger bat cookies this year. I think my daughter has been too busy with school and cheer that she hasn’t had the time to remember to ask me for them. These cherry pie cookies combine two favorites. Cherry pie and cookies! They’re super simple to make with less than 5 ingredients and are super adorable! They’re basically mini individual hand pies that look like pies and yet are shaped like cookies. They make for an impressive dessert, even though they’re so simple.

There isn’t a whole lot that can be done to make these better-for-you other than using a lighter pie filling. You could even make your own pie filling and use that, but today I was keeping it simple so I personally opted out of that option…

Look, I don’t know. I’ve just been on a cookie binge lately I guess. But, I wanted something a little more ever green today than my Irish Cream Chocolate Chip Cookies from last week. Irish Cream Chocolate Chip Cookies

As we get closer to March and to St. Patricks’s Day, I thought I would try my hand at making some chocolate chip cookies, but with a little bit of an Irish twist. These cookies here are made with some Irish Cream baked right in. And let me just tell you, they’re so sooo good!

The out edges are browned and have a little crisp to them while the insides are light, moist, and totally fluffy. And there’s just enough Irish Cream in there to get a hint of the flavor without it being over powering.
