So, here’s the thing. Sometimes when you’re trying to eat better, feel better, and be better… you need to indulge a little bit. One of the many mantras that I try to keep in my own mind is that you can ‘eat whatever you want so long as you cook/make it yourself.’ I think the idea behind it is that you would burn off as many calories in making your food as you would eating it, or at least enough to counter balance it.

That means, today we’re having a Triple Chocolate Cheesecake and I’m not going to feel guilty about eating it. Why? Because I made it from scratch and I did my very best to make it better-for-you while still tickling that chocolate craving itch with all the richness and decadence that comes along with it….

Instant Pot Cheesecake Bites

Most recently I found a fun way to make tamales in the instant pot, and being as I’ve also made a cheesecake in the instant pot too, I thought… is it possible to make mini cheesecakes? As it turns out, it is! These Instant Pot Cheesecake Bites are fun and easy to make. Plus, they’re lightened up just enough to be guilt free while still tasting great.

As it turns out, the instant pot is a great way to make cheesecakes, and these mini ones are made directly in my handy-dandy egg bite mold! I lightened them up by using sweetener instead of most of the sugar, and also used a reduced fat cream cheese…

Skinny Pumpkin Cheesecake (Instant Pot)

I’ve made cheesecake in the instant pot before and with Thanksgiving coming up so soon, I thought it would be a great time to make a pumpkin cheesecake! This festive and lightened up cheesecake takes no time at all to put together and make in the pressure cooker. Plus, it’s every bit as good as any baked version while saving you time and the hassle of actually baking it.

It’s lightened up in the easiest of ways, using reduced fat cream cheese and substituting some of the sugar out for natural sweetener; which can be any sort that you like. Stevia, monk, splenda, etc. You can also top this cheesecake off with any toppings you desire. Caramel, chocolate, whipped cream, and the like…

No Bake Circus Animal Cookie Cheesecake

It’s getting hot here. Hot as in… we’re already breaking heat records here in Texas. Gross. That being said, it’s time to start using the stove and oven less, and instead focus on meals and recipes that don’t require any heat! While I’m still busy using up pantry staples I thought it would be a great time to use up some old circus animal cookies that I’ve had stocked away from Halloween truck-or-treating.

So, what do you do with leftover cookies and no heat? You turn them into a no bake cheesecake! This is a scratch no bake cheesecake. Not made with that boxed mix from the store. Nope! Turns out you don’t need a pre-packaged box to make a proper no bake cheesecake…

Low-Carb Instant Pot Cheesecake

Today it's going to be a whopping 107 in Austin, Texas! I'm at that point of summer where it's so hot that I nearly want it to be over, but I'm also not quite ready to end the freedom with the onslaught of another school year for my daughter. Let's face it, there is just something about waking up in the morning naturally and having absolutely nothing on the schedule that's required to be done that day.

So, while it's literally as hot as hell in Texas... That doesn't stop me from wanting the things that I can't have. Or dare not have, anyway. Things that generally require the oven. Things like... cheesecake. Here we have a no-bake cheesecake that still manages to be cooked!…
