Skinny Turkey & Wild Rice Soup

It happens every Thanksgiving... What do you do with all that leftover turkey? And believe me when I say that I have a freezer full of it this year. And you know what? I'm not at al mad at it either.

I'm happy to say that I've got a solution for you right here.

Healthified 'Swamp' Soup

A long time ago in a galaxy far far away... whoops! Wrong story. Ahem. A long time ago, I made this heavenly soup for my family in the midst of winter and it was an instant hit! And it still is to this day. But, the post here needed some updating so here you go!

I've made the soup a few times over the years and each time seem to make it more and more my own. While the base of the soup remains the same, I've definitely built my own little swamp here.

This soup is pretty hearty and rather filling for being loaded with basically nothing but vegetables. And no, that isn't a complaint in the least. I love my vegetables almost any which way, cooked, raw, steamed, grilled, etc…

I know there’s a lot of you out there that are going to be getting a fancy new air-fryer for Christmas this year. If not from someone else, maybe you’re buying one for yourself. They are all the rage right now anyway, right? I’ve been putting off getting one, but I’ll be the first to admit that I’ve been curious about the thing; how it works and if it works well.

I have long since made it my duty to not have a fryer in my home. When I was growing up we had one and my mom would rarely use it, and generally only for making french fries. Though there were a few shameless fried-food nights where my parents would fry up literally everything. Clearly, that isn’t how my own kitchen functions. Either way, my brother is in town and he brought his air-fryer for me to try out. And guess what? I don’t hate it…

Leftover Turkey Stew

It’s hard to know exactly what to do with leftover Turkey after Thanksgiving. I’ve made soups, dumplings, and a few other things in the past. This time though, I thought I would try my hand at making a sort of stew. It was surprisingly cold here on Thanksgiving this year, which is pretty strange. The past few years, we’ve had a super sunny Thanksgiving with a high of something near 80 degrees.

This year, we were in the 50’s, it was over cast, and misty. Normally I would say it was a ‘yucky’ day, but I always enjoy cool weather on the holidays that keeps everyone indoors and cozied up together. You know, encourages us to spend family time together. With it being chilly, I thought a stick-to-the-ribs hearty stew would be the best option for turkey usage!…

One Pot Vegan Pumpkin Curry Soup

It’s starting to really cool off and stay cooled off here in Austin and I couldn’t be any more ready than I am! Bring it on Fall! This One Pot Vegan Pumpkin Curry Soup is a great Fall soup. It’s thick, ‘creamy’ without any cream added, and perfectly guilt-free. It’s also gluten-free with no added oils or sugars! The best part is, you get 2 heaping cups in each serving that comes in well below 300 calories.

Even with all of that? This soup is easily made in ONE pot in under 30 minutes! How can a dinner time soup get any easier than that? Did I mention this soup is completely delicious? Yeah, that too…
