Tex-Mex Chicken Cakes (Air-Fryer)

June 18, 2021 Amanda Plott
chicken-cakes7.jpg

I don’t make it a big secret that I am no fan of seafood. I am not now and have never been. It’s not got anything to do with an allergy or taste or texture. It is simply that I don’t want seafood in my mouth. It’s one of my many strange little quirks. That generally means that for most of my life, I’ve made seafood free alternatives, and these Tex-Mex Chicken Cakes are one of those!

Crab cakes or fish cakes have always intrigued me, but again… being as I’m not a fan of seafood I thought I’d try my hand at making a chicken version. These Tex-Mex Chicken Cakes are super simple to make and you get a lot of bang for your buck with a whopping 14 cakes made with one go of it…

Air Fryer Cream Cheese Rangoons

May 16, 2021 Amanda Plott
air-fryer-cream-cheese-rangoon6.jpg

When I decided to make my Egg Roll in a Bowl this week, I thought some cream cheese wontons would be the perfect appetizer to go with it. And since I’ve already done baked ones, why not try them in the air fryer? As it turns out, the air fryer is the perfect way to get some crispy and delicious cream cheese rangoons!

These crunchy cream cheese bits are great for dipping and dunking into your favorite asian inspired sauce alongside your favorite asian inspired meal. They’re quick and easy to make while also being kid-friendly and vegetarian! You could take them a step further and make them vegan too with a tofu cream cheese - which is something I have totally done before…

Air Fryer Lasagna Fritta

August 15, 2020 Amanda Plott
lasagna-fritta12.jpg

Pasta is one of my favorite things. So is cheese. So, of course I love myself a good Lasagna Fritta. What’s a Lasagna Fritta, you ask? It’s an Olive Garden appetizer dish that I adore. But, you know… fried stuff. Being as I’ve got a handy dandy air fryer, I thought I’d try my hand at a Lasagna Fritta copy cat dish that’s made a bit more healthy!

This Air Fryer Lasagna Fritta got rave reviews from around the table. I literally got a thumbs up from my brother and was told that I should make it again sometime really soon. I too was surprised with how GREAT this Air Fryer Lasagna Fritta turned out. Air fryers can be one of the most amazing kitchen gadgets to have. For cooking CERTAIN things…

Cinnamon Sugar Donut Twists (Air-Fryer)

July 21, 2020 Amanda Plott
cinnamon-sugar-donuts15.jpg

I’ve said it before, and I’ll say it again. Donuts are a weekly staple in my house. And sometimes, especially these days, I’d much rather make them myself than go out and get them from somewhere. Baked donuts have their place in this world, but being as I’ve fallen in love with my air fryer, I thought I would give donuts a try in it!

These Cinnamon Sugar Donut Twists are every bit as good as ones you’ll get from any local donut place. But, they’re a lot better-for-you being made with far less sugar and oil. They’re sort of a cross between baked donuts and fried donuts. A perfect mix of the two…

Air Fryer Fried Pickles

February 19, 2020 Amanda Plott
air-fried-pickles12.jpg

Fried pickles… need I say more? One of my favorite things to enjoy at the local theater is their fried pickles. Nice sized spears that are perfectly crisp on the outside and hot as hell and juice on the inside. Perfect for dipping into some ranch on the side while watching a movie.

I’ve tried my hand at faux fried pickles, by way of baking before. And while they pickles turned out pretty good, they were still missing a bit of that crunch factor. …As most faux fried things tend too. So, now that there’s an air fryer in the house I thought it was the perfect time to air fry some pickles!…

Air Fryer Potato Chips

January 28, 2020 Amanda Plott

So, the air fryer has quickly become one of the most used gadgets in my kitchen lately. It’s not only a time saver when it comes to crispy-crunchy bites that I normally bake, but it’s also fun to play with and tends to get my usual faux fried things even more of the faux fried texture and taste!

These Air Fryer Potato Chips are no different. They’re made with just THREE ingredients and all of 30 minutes of cook time. The best part is that they are SO much better for you than the ones you buy at the store. Why? No preservatives and like I said… THREE ingredients. You can’t beat that!…
