Mini Shortbread Christmas Cookie Bites

These tiny Mini Shortbread Christmas Cookie Bites are really one of the best things I’ve put in my mouth this week. They’re light, crisp, buttery and full of festive holiday sprinkles. Of course, I didn’t go with traditional ‘red and green’ sprinkles. I found some awesome colorful ‘gingerbread’ holiday sprinkles that really made these tiny bites pop!

The very same ones that I used in my Healthified 'Lofthouse' Soft Sugar Cookies! The sprinkles here DO make a difference, so be sure to use your favorites. Jimmies and ‘confetti’ style sprinkles work best because they don’t bleed out color into the batter as easily as some others…

Despite the trying times, the word is still turning and life continues. What does that mean? I’m in the thick of it being pretty much everyone in my direct families birthday time. There’s about a three month segment of time in the summer that houses somewhere about 9 birthdays. This week? It’s not only my dad’s, and mine, it’s also Father’s Day! Skinny Baked Funfetti 'Cake Batter' Oatmeal

Back when I originally made this, my amazing little girl wass turning 4 years old the very next day and I could hardly believe how fast time was flying! Today, she’s a month into 10! One of her most favorite things in the world when she was little (and still is today) are sprinkles. Every year for her birthday I always try to come up with a 'sprinkle' heavy (funfetti) dish in her honor.

Well, alright... so funfetti and sprinkles are a few of my most favorite things in the world as well. I mean... what's better than eating a rainbow? I like to imagine that it appeases my inner child for a while…

Whole Wheat Sugar Cookie Bars

In the midst of chaos, I managed to get my hands on some pretty sprinkles! And what does a girl do with sprinkles? She bakes up a sweet treat and uses the sprinkles for decoration! These Whole Wheat Sugar Cookie Bars are perfectly delicious while being made just a little better-for-you by using whole wheat flour and some natural sweetener in place of sugar.

The best part is, you still get frosting with these cookie bars! Yep, that’s right, these thick, fluffy cookie bars are topped with what I think is a perfect layer of homemade frosting. Not too thick, not too thin, and adds just the right amount of sweetness…
