Skinny Pumpkin Chocolate Chip Bread

Usually around this time of year my daughter is begging my mom to make pumpkin chocolate chip bread or muffins, but since my mom isn’t around yet this year (for the obvious reasons and the not so obvious ones) , I decided to whip up a loaf of the family favorite myself.

This Skinny Pumpkin Chocolate Chip Bread is lightened up in the best of ways without sacrificing flavor or texture. The bread is just as moist and decadent as it’s full on bad boy brethren - I promise! I only made a couple of swaps to this bread. Blackout Brownies

A couple of weeks back I got my hands on some ‘black’ cocoa powder. It’s extra dark unsweetened dutch process cocoa powder and it is delicious! It’s a great way to get a naturally deep dark black chocolate for baked goods. Which means it’s absolutely perfect for blackout, black velvet, and Halloween sweets!

Double Chocolate Pumpkin Bread

I’ve been in bread mode lately for breakfast, if you couldn’t tell. And with the influx of cooler weather and it officially being Fall now, of course I had to get with baking up some chocolate pumpkin bread. Not just that though. DOUBLE chocolate pumpkin bread. This tasty breakfast treat is as rich as it comes and sooo decadent.

The pumpkin and applesauce being in this bread means it’s super moist and you barely need any oil in it at all. I kept it as low as I could with sugar by substituting in one of my favorite swaps, a brown sugar/sweetener blend. You’ll never know the difference in taste either! So the other day I ordered pizza. Yes, delivery. What? You think I eat healthy all the time? Nope! Fun Fact: I whole heartedly believe that part of eating right and healthy means that sometimes you should afford yourself splurges. Give into a craving every once in a while. …Anyway. I also grabbed a ‘cookie pizza’ and my kid sort of fell in love with it.

Today I decided to have her help me make one! Of course, the one we made is better for you already simply because it’s homemade and from scratch. Plus, the sugar is reduced and we have complete control over what’s going into it. And hey, any excuse to get her in the kitchen with me is a good one…

I don’t know why, but I always go into peanut butter and jelly mode as the summer winds down and back-to-school starts to nip at our heels. What can I say? But, I’m sorry and you’re welcome.
