Long story short, there was a trip being planned to Hawaii that I would currently be on. But, then this virus took over the world. So. The trip to Hawaii didn’t happen this summer! That being said, a few recipes were planned and made well ahead of time so that I would be ahead on things before going on vacation.

Strawberries and banana go together like a perfect pair in anything from smoothies, juices, desserts, and other sweet treats. But never banana bread. Why not? Today that changes! This Strawberry Banana Bread is one of my newer favorites. Especially right now during summer strawberry season.

Move over plain jane banana bread! There’s a new banana bread in town, and it goes by PBJ. That’s right, this banana bread is made with creamy peanut butter, crunchy peanuts, and a swirl of strawberry jam. It’s like banana bread and a PBJ had a baby! Who says you can’t have a PBJ for breakfast?

For being loaded up with all the PBJ favorites, this banana bread is made better-for-you in the best of ways! All of the sugar has been subbed out for natural sweetener, and half of the oil was swapped for an unsweetened apple sauce. Don’t worry though! Cinnamon Toast Crunch Banana Bread

This banana bread is jazzed up with cinnamon and sugar and topped off with a crispy crunchy crumb that is out of this world delicious - if I do say so myself. The idea for this banana bread is actually based on the cinnamon toast cereal that we all know and love. I’ve had a box stocked away in my pantry for some time now since my daughter suddenly decided after a week of eating it that she now doesn’t like it.

So, what do you do to use up cereal? You use it in a crumb topping for banana bread, of course! And let me just say, this banana bread is the perfect combination of the two. A tasty banana bread and cinnamon cereal all in one bite together. The best of both worlds!…

Peanut Butter Cup Banana Bread

Everyone is all into banana bread right now. And I’m over here like… normal banana bread can be boring. Let’s jazz it up a bit with something extra special. Peanut butter and chocolate. Hell. Yes. This Peanut Butter Cup Banana Bread is about ad decadent seeming as banana bread can come. The batter is made with a touch of peanut butter and then mini peanut butter cups are mixed in for added amazingness.

The batter itself is lightened up by way of plenty of mashed banana and some greek yogurt too. There’s also no actual sugar used in this bread. It’s made with natural sweeteners and blends. The end result is a light, fluffy, rich and delicious breakfast bite that is sure to impress…

Skinny Chunky Monkey Cookies

If you’re a fan of ice cream then obviously you’ll understand the name of this cookie. I based these sweet little bites off of one of my most favorite ice cream flavors. Chunky Monkey! Just like the name states, these cookies banana based cookies are… well… chunky! How? They’re loaded up with dark chocolate chips and chopped walnuts.

The best part? These cookies are guilt-free enough that they could even work as a breakfast cookie. Seriously. Pair one with some fruit and you have a fun and tasty cookie for breakfast! Even better, they’re vegetarian and egg-free. ..
