Skinny Strawberry Banana Poke Cake

It's been a really long time since I made any sort of a cake, especially a poke cake. And with the end of summer on our heels, I thought I might throw a few more good strawberry recipes into the mix before they are too far out of season. This Skinny Strawberry Banana Poke Cake starts off with a lightened up strawberry cake that's made with a simple boxed mix that we're upgrading just a bit.

So, what's a poke cake? It's basically exactly what it sounds like. A baked cake that you poke holes in. Skinny Banana Pudding Poke Cake

What can I say? I needed some more dessert in my life, y'all! It's been a really hard week. I went into Spring break with my little one thinking that it was going to be smooth sailing. That I was going to get to sleep in, relax, and catch up on life. Hah! Boy, was I ever wrong.

My elderly cat (who is 13 years old now) had to get a few teeth (almost all of them) extracted. Nearly as an emergency too. He's a big boy - 18 lbs. at his heaviest as a mainecoon. Unfortunately one of their only bad qualities is their teeth. Despite my best efforts these past few years to get them cleaned regularly, it just wasn't enough and 5 of his teeth had to be pulled. Given his age and other health concerns it's been a week full of medication and even a trip to the emergency vet yesterday. Mid-recipe too!

Yep. Right after pulling this cake out of the oven I was hot-tailing it to the emergency vet. Bleh. While my poor old man is on the mend, I still am in desperate need for some dessert. Dessert, my mommy, and maybe some wine. I can't adult today...

Chocolate Chia Pudding

I'm up and at it this morning! It felt pretty nice being able to 'sleep in' to a ripe old 7 o'clock this morning. Truth be told, I wallowed around in the bed for another 30 minutes before I actually managed to peel myself up. It's been a busy few weeks around the Plott house between school coming to an end for the year, dance recital chaos, and a head cold that just won't quit.

Needless to say, I was ready to hit the kitchen today to whip up this tasty little number that I've had in my head for a while now. A few weeks back (maybe a month even) I tried out a new chia pudding that the little cafe/juice bar located inside my gym had started offering. It was pretty tasty and I was surprised with the actual 'pudding' like texture.

A lot of chia puddings out there have that tapioca texture. Which is just fine with me, but not always with everyone...

Vanilla Chia Pudding & Strawberry Puree

As warmer weather starts to roll in, I'm always looking for meals and snacks that are easy, healthy, and also not requiring any source of heat. Chia pudding is and has been one of my favorite quick breakfast and snack options. Toss it together the night before and bam, the next day you have an easy breakfast or a beautiful treat.

Chia pudding is generally gluten-free so there's that as an added bonus, but I wanted to do something a little different today. I also wanted to make it dairy-free as well. I try to do what I can to provide recipes for all special dietary needs, and I often times feel like I lack a little when it comes to lactose/dairy-free.

This perfectly de{light}ful pudding is great for either a breakfast, snack, or even a dessert option. It's sweet enough for dessert and yet healthy enough for breakfast!...

Healthified Chocolate Chip Pudding Cookies

The first time I made these chocolate chip pudding cookies, I was in love. I'm not sure what it is about adding in a packet of vanilla pudding mix to the dough that completely transforms the texture and flavor of the cookie into perfection. But, it does. And it's brilliant.

These cookies turn out sweet, but not too sweet... with a crunchy edge and an ooey-gooey warm and soft center. Just the way that a chocolate chip cookie is supposed to be!

Seriously, my dad will fight you over his belief that a proper chocolate chip cookie is suppose to have a soft and chewy center. Never hard and/or crunchy...

Chia seeds are full of health benefits. These amazing little seeds slow digestion, help prevent spikes in blood sugar for diabetics, are full of fiber, omega-3, calcium, manganese, protein, and so much more. They also help you feel fuller faster.
