It’s a wide world of crazy out there right now. Things are being shut down left and right and groceries are scarce at this point to say the least. Until things return to normal, I’m doing my part in staying around home and coming up with simple, easy to make recipes that can hopefully be made with just a few staple pantry ingredients that everyone should have on hand.

Fresh Turkey Salad

I’ve decided to call this ‘fresh’ turkey salad because I loaded it up with plenty of fresh fruits and veggies. No nuts. No dried fruits. Fresh, fresh, FRESH! I borrowed the base of this recipe from my Skinny ‘Leftover’ Turkey Salad, and made just a few tweaks and adjustments to get it to something that was a little more… fresh!

And now for the speech! Turkey salad as in chicken salad. Not a salad with chicken or turkey on it. But, rather a ‘salad’ that’s made up WITH turkey and chicken. The sort of thing you can smear on some toast for a turkey salad sandwich, or load on top of crackers…

Who else sneaks bites of raw cookie dough all the while knowing that you shouldn’t do it? I know that I sure do despite my greatest efforts not to. I’ve made raw edible cookie dough in the past, and it was pretty damn delicious. But, I thought I would take it a step further and make a gluten-free version of it!

Yep, that’s right. This edible cookie dough is not only egg-free, vegan, and vegetarian, but it’s also gluten-free AND dairy-free. Covering all the major bases here while also getting to indulge in some cookie dough. Sounds like a win-win situation, right?…

'Nut & Seed' Grain-Free Pumpkin Spice Granola

It's been a hot minute since I made up a batch of homemade granola, mostly because it's just been way too hot here to even think about turning the oven on. But, sometimes... it's just worth it. And this morning? It was just that - totally worth it! With pumpkin spice season on the horizon, I thought there was no better time than now to tempt the cooler weather in with another pumpkin inspired treat!

I based this grain-free granola off of one that I made a while back. The main differences would be the spice used in it and the seeds that I chose to include. Since we're going with the Fall theme, I decided to use pumpkin seeds. Two kinds of pumpkin seeds, that is. It's about this time of year where my fridge is well stocked with fresh fruits and berries. Which is something I am not sad about. And there is little that tickles my pickle more than a homemade cobbler. So, when I got my hot little hands on local fresh blueberries and peaches, I knew it was high time to make a gluten-free and vegan version of a cobbler.

Strawberry Grain-Free Granola (Gluten-Free too!)

Holy. Moly. We are well into the 90 degree days here in Austin Texas and summer is nipping at our heels. The house is stifling in the days, and even while the mornings are still decently cool, I am over here preparing for the onslaught that is about to befall us with raging 100 degree + days.

As the weather turns warmer, I'm starting to lean towards the cooler and more refreshing bites for breakfast. Cereals. Yogurts. Fruits. My only problem is that all the good granolas out there cost a pretty penny. That's why I've been opting to make my own. Plus, I love being able to make my own unique flavors and there is nothing more Summery to me than strawberries. Here in Texas, the strawberry season starts in Spring and seems to go almost all Summer long. We even have a festival for strawberries here in the summer! What's up Poteet Strawberry Festival!…
