And just like that, this is the last post of not only the this year, but of this decade!

I decided that with this being the last one of the decade, I thought I would take it a step further and make this recipe even more special by including my little mini-me in on it. I mean… she has two and a half weeks off from school and I need to entertain her somehow, so I put her to work making cookies and writing about it.

So, we sat down and planned out what exactly we’d make. She happened to a book on ‘kids cookies’ a few months back and so that’s where we started. Within the book there’s a recipe for some chocolate cut-out cookies, and that was our inspiration for today! These Kid-Friendly Chocolate Cut-Out Cookies are easy to make and require just a few ingredients, plus they end up tasting just like the cookie part of those famous sandwich cookies we all know and love. Whole Wheat Gingerbread Men Cookies

Tis the season… for cookies! It came to me suddenly the other day that I had never shared an actual gingerbread cookie recipe. I’ve done chocolate ginger cookies and butterscotch ginger. But, never actually gingerbread GINGERBREAD cookies.

Healthified Oatmeal Raisin Cookies

One of the first swaps I made was to use a whole wheat white flour. Why? I wanted to get the whole wheat in there without the ‘grit’ of whole wheat flour. I also subbed in a brown sugar/sweetener blend instead of full on brown sugar. This cut down the sugar on these cookies immensely.

Other than that, these cookies are really pretty standard. Oats, raisins, and some spices.

These cookies do take some time, but that’s only because the dough needs to chill for at least an hour in the fridge to avoid the dough spreading out too much when baking…

Lightened-Up S'more Chocolate Chip Cookies

The other day we had some sort of freak cold front roll through here in June and let me just tell you that the 69 degree weather that day had me inspired to turn my oven on for one of the FEW times during the summer. Kid-Friendly Spring Snack Mix

Spring is in the air. And do you know how I can tell? Allergies! I don’t know about the rest of the planet, but right here, right now, it’s allergy chaos. Never mind that Austin has been engulfed with what is now going on three WAVES of the flu. Just a couple of weeks ago, my daughter’s whole third grade class was pretty thin. Some out for allergies. Others out with a virus. Thank goodness the little babes are in a little bit better spirits this week.

Every year they have a fun book party to celebrate reading a certain amount of ‘crown books’. This year the request from the librarian was for Spring themed eats and treats. Lightened-Up Brown Butter & Bourbon Chocolate Chunk Cookies

These cookies are legit.

They are much a mouthful to say as they are a mouthful to eat. They are absolutely STUFFED full with all sorts of yummy and delicious tidbits of YUM. We’re talking big chocolate chunks, buttered pecans, and YES even BOURBON.

To say that these cookies are full of flavor would be a sad sad sad understatement. I have to admit that I was a bit skeptical that browning the butter would add more flavor, but it is DEFINITELY worth the few minutes of effort. That along with the bourbon… I’m in heaven over here…
