Usually, banana bread is banana bread is banana bread. But, being as I intend to make food a whole hell of a lot more fun and exciting this year, I decided to do what any mother does best. Add rainbows to the mix! This colorful twist on banana bread has lovingly been dubbed as Unicorn Banana Bread and it’s pretty easy to see why.

Pumpkin Pie Smoothie

I’ve pretty much been in smoothie mode recently which is pretty strange since I wasn’t a big fan of them in years past. I always tended to rather eat my food as opposed to drink it. But, with it being 90+ degrees here still in Austin… I figured the best way to get my pumpkin in the start of this Fall would be in the form of a smoothie.

This Pumpkin Pie Smoothie is SO. Damn. Good. There’s just enough spice and pumpkin in there to really get the feel and taste of pumpkin pie. And for well under 300 calories for a full on breakfast? I’ll take it!…

Healthy Banana Split

I LOVE banana splits. But, I’ll be the first to tell you that I haven’t had an actual one in yeeeears. In fact, I think the last time I had one was when I worked in an ice cream parlor. Yep! I worked in an ice cream shop when I was fresh out of college and before I got my real adult job as a graphic designer. It’s probably a good thing too. I got all my ice cream eating out of my system at a young age when I could afford the calories.

This banana split is a nod to the classic. But, it won’t leave you feeling guilty. Actually, this banana split is SO deliciously guilt-free that you can even indulge in it for breakfast. That’s what I did. I had this bad boy for breakfast and I couldn’t be more okay with it…

This Black & Blueberry Smoothie is quick and so SO easy to make with just a handful of simple ingredients and a quick whirl around in the blender. This has been one of my go-to breakfasts for about two weeks now. And let me just say, that I’ve never been one to be that big into smoothies before. In the past, I’ve not been a huge fan of drinking my meals. But… over the past year or two it’s become a go-to in a lot of cases. Life continues to get more crazy and busy, and it’s just easier and quicker to down a meal in a few glugs rather than sit and focus and eat. Chunky Monkey Amish Oatmeal

After banana nut on my mind, and a pantry full of leftover oatmeal, I pretty much knew immediately what I was going to be making this week for breakfast. Some sort of… banana nut oatmeal. But! Not just any banana nut oatmeal. I wanted it to be chunky monkey style. What’s chunky monkey? Well, one of my most favorite flavors of ice cream that’s made with bananas, chocolate chunks, and walnuts.

There you have it, chunky monkey oatmeal. Of course, one of my favorite ways to make oatmeal is for it to be baked and ‘Amish’ style. This breakfast oatmeal also happens to be gluten-free (so long as you mind your brand of oats.)…
