This first week of summer has been dubbed cooking/baking week, which means that mea and my girl are going to spend the majority of our time in the kitchen. Skinny Strawberry Bread

It’s STRAWBERRY season! Fresh strawberries are one of my favorites. But, then again, any fresh berry that’s in season will be welcomed with open arms. Even so, with all this big glorious berries around right now, I thought it was high time to put them to use!

Sundays are for brunching, and this Sunday is no different. Skinny Bacon & Cheddar Irish Soda Bread

There is one thing that I absolutely MUST make every year towards the end of February and the beginning of March, and that is Soda Bread. Again, it’s a nod to my Irish roots. Irish soda bread is a yeast-free bread that is quick and super easy to make. Really, guys… it’s almost fool-proof. Almost. Trust me, I know because baking tends to scare the pants off of me.

I used my original Healthified Irish Soda Bread as a base for this Bacon & Cheddar variation. This time around I used whole wheat flour to get a more golden color at the end, and of course… loaded this bad boy up with plenty of cheese and bacon goodness…

Alright, alright… so… monkey bread has been an obsession of mine lately. I admit it! I can’t help it. Skinny Eggnog Bread

It’s been a while since I made some homemade bread. And being that it’s baking season, I thought it was high time to made another loaf!
