It’s finally here. We’re down to the finally 7 days before school lets out for the summer for my kiddo and I honestly thing that at this point, I’m more excited than she is. I just want to get through the next few days and have the freedom of summer ahead of us. That being said, I’m also in the throes of getting beach-bum ready. And that means watching what I’m eating and doing all the more.

Skinny Buffalo Chicken Dip

What can I say? I'm a huuuge fan of buffalo flavored anything.

Okay, not anything... but almost!

I think I eat buffalo something for lunch or dinner every week. ...Yeah, that sounds about right.

This skinny buffalo chicken dip is nothing short of amazing. It's super easy and tastes great. Plus, you can cook it up using the crock pot, oven, or even the stove! No one will ever guess that it's lightened up and only about 100 calories per serving.

I found that I didn't have any complaints in serving this with veggies for dipping and I have some picky palates around me!...

Crock Pot Turkey & Cranberry Meatballs

It seems like I can't seem to have a traditional Thanksgiving anymore. Last year it was decided that we wouldn't be doing the cooking, and instead we went out to a nice restaurant to enjoy the day footloose and fancy-free. This year? We'll be (hopefully) tailgating at the UT game here in Austin. Sounds like a blast, right? Right?!

At first, I was anything but excited when this prospect came across my ears, but after some careful research and lots of thought on it... I soon became pretty excited about it! After all, this will be my first UT game and I've lived here for a good three years now. Plus, my brother is in his last year of college as a Longhorn - which makes the fact that I haven't been to a game yet even more shameful.

So what does all this mean? Game day versions of my usual Turkey Day meal!…

While these aren’t skeletons, or made of bones, these 'Tombstone' Pizza Pockets are super cute and rather easy to make too! I tell you, summer is not going to go down without a fight this year. It's been well over 100 degrees here in Austin, Texas and so far we're still hovering in the upper 90's and often with a heat index of 106+ - yikes! It's hot, but nothing is quite as hot as this Quarter Pounder Burger Salad.

Let's face it, we all know what a 'quarter pounder' is. We don't even need to add the 'burger' part to that phrase and we'll all understand what's being spoken about. A quarter pound patty that's got lettuce, tomato, pickles, maybe some onion, and of course special sauce!

While it's unimaginably hot outside and football season is officially kicked off, I decided the best thing to do was to cool off with a nice hearty salad ahead of any big game tailgating (or homegating.)…
