It’s getting hot here in Texas, and I don’t know about the rest of you but I could use something to cool me off by the time lunch rolls around. Even though we’re keeping things as simple as possible during the summer months, there’s still a lot of out-and-about happening. (The summer months are when the vast majority of our family birthdays are - so we’re all over the place celebrating!)

With all that’s going on around me, I like to have my lunch prepared and ready to go so that I can grab-and-go on my way out the door to whatever we might be off to. And since we’re in between our themed summer weeks of kids cooking/baking and fantasy, I thought this Rainbow Wrap Lunch Box would be the perfect fit…

Rainbow Bread

It’s the first day of Summer break and my kiddo and I are already digging into our themed weeks! This first week of summer has been dubbed cooking/baking week, which means that mea and my girl are going to spend the majority of our time in the kitchen. That’s not really a new thing to me, but… it’ll be new to have her at my side for most of it!

Since we’re baking and since it’s Pride month, I thought it would be fun for me and the girl to try our hand at making some rainbow bread. Now, I used to have a bread maker that was super handy for these sorts of things, but to be honest I couldn’t have used it here anyway. Spring is well on the way and when the weather starts to turn warm, I start to crave that bright burst of citrus and salad. Namely lemons and anything cool and crunchy. This Rainbow Carrot Salad is one for the books. It’s light, easy to make, and a perfect little side dish for any good weeknight meal.

This Rainbow Carrot Salad is one that I love to serve along side my Crunchy Garlic Baked Chicken, since both have just a touch of that fun lemon zip. The carrots are a good base for this salad. They’re cool and crunchy while being able to soak up all the other flavors going on here…

Skinny Funfetti Cake with Buttercream Frosting

There is nothing that puts a smile on my face more than my daughter and rainbow sprinkles. That's why my daughter and I got on it this weekend and made this oh-so-pretty confetti cake! Confetti, funfetti, it's all the same thing. It means SPRINKLES, and lots of them too! We're talking, I bought a whole container of rainbow sprinkles specifically to use in and on this cake. And let's just say, I am not disappointed.

Of course, by saying my daughter helped me, it really means that she stood on the chair in the kitchen, dumping things into the bowl and sticking her cute little fingers into everything sweet she could manage. But you know what? It's helping her with her math and we're growing and learning together. One cake at a time…

Skinny Rainbow Unicorn Donuts

Unicorn fever is spreading, and I'm loving every second of it. Now there's even chatter about Mermaids and Dragons too! However, nothing is quite as whimsical or magical as the mysterious Unicorn. Except maybe these donuts. They are perfectly colorful and special in every way; from their fun vibrant colors to their lightened up and magically guilt-free batter. These donuts are sure to be a spectacular rainbow hit!

My daughter's face when she got home from school and saw these on the counter waiting for her, was pretty priceless. That says it all right there. My little girl is 6 years old now and is a little eccentric. She's a lefty and as such is incredibly creative and imaginative.
