Banana Nut Granola

April 19, 2019 Amanda Plott

Banana nut bread has to be one of my most favorite things in the world to eat for breakfast. I honestly don’t make it enough, and haven’t made it in a good long while. So, needless to say, I’ve been craving it lately. I thought this time around though, that I would put a little twist on it and turn it into a granola instead!

Cereal has been the name of the breakfast game in my house for a good solid week now. We’re busy eating up a few boxes that were used in that Camp Out Trail Mix last week. Waste not, want not. Right? As we got to the end of the boxes, I knew it was time to make this Banana Nut Granola…

Skinny Strawberry Banana Poke Cake

August 29, 2018 Amanda Plott

It's been a really long time since I made any sort of a cake, especially a poke cake. And with the end of summer on our heels, I thought I might throw a few more good strawberry recipes into the mix before they are too far out of season. This Skinny Strawberry Banana Poke Cake starts off with a lightened up strawberry cake that's made with a simple boxed mix that we're upgrading just a bit.

So, what's a poke cake? It's basically exactly what it sounds like. A baked cake that you poke holes in. This time around though, we're filling those holes with some banana pudding and then topping everything off with some coolwhip. This style of cake makes for one delicious treat that's perfectly decadent…

A long, long time ago, when I was new to this wide world of cooking and sharing my recipes... I made these Healthy Peanut Butter Oatmeal Cookies for National Oatmeal Cookie Day. ...And boy-oh-boy am I ever glad that I did. This recipe right here has been on the top 10 most viewed recipes here for almost the entire existence of The Skinny Fork. There's a reason for that too. These cookies are AMAZING.

They are gluten-free, low-carb, vegetarian, vegan, and naturally GUILT FREE. It's a bonus too that they're so quick and easy to make. You will wonder from this point on how you ever lived without them.

Healthy cookies. Sounds like an oxymoron, right?…

Vegan Bananadoodle Cookies

March 9, 2018 Amanda Plott
bananadoodle-cookies9.jpg

Once upon a time I went to a place and tried a bananadoodle cookie, much against my will, and I liked it. No. Nope. No, no scratch that. I LOVED it. It was truly one of the best cookies that I had ever eaten. And that's saying a lot because I am a cookie fiend. I was completely surprised with how much I enjoyed the cookie. Mostly because out of all the cookies in the world, snickerdoodles are probably one of my least favorites.

I think I must find them bland or boring when compared to just about any cookie that's usually loaded up with extra naughty bits like chocolate chips.

Winter Citrus & Honey Power Breakfast

January 21, 2018 Amanda Plott

I guess you could say that this is one bee-utiful breakfast. Ba-dum-psshh! Okay. Seriously though? Let's talk about this power breakfast right here. It's winter right now and there's a plethora of fresh winter citrus going around. Right now is one of the few times of year that you'll find blood oranges out and about.

Don't be scared either. They're called blood oranges because of their usual deep red splotched on their peel and their rich ruby red color of fruit inside. If you've seen or had blood orange juice before, you know what I mean. Along with blood oranges, the grapefruits are HUGE right now too. Just the way I like 'em. Big and juicy...

Cocoa Banana Cherry Power Bowl

September 13, 2017 Amanda Plott

This post is part of a social shopper marketing insight campaign with Pollinate Media Group® and Sejoyia, but all my opinions are my own. #pmedia #CocoRoonsAtWalmart  http://my-disclosur.es/OBsstV

I don't know about you, but I'm still settling into the school day routine all over again. It's hit me hard this year. I guess because my little girl was eagerly sleeping in pretty decently in the summer and now all the sudden it's a 6 am wakeup call to drag her out of bed. She isn't like me. She isn't a morning person.

It's easy (even for me) in the midst of chaotic mornings to not eat as well as I should, or even *GASP* eat nothing at all. Recently I got my hands on these Sejoyia Coco-Roons and I gotta say, they are perfectly portable, popable, mom-friendly, guilt-free snacks. But, I decided to take them a step further from snacking today to include them in this Cocoa Banana Cherry Power Bowl!...
