It’s atrociously windy and cold Cold COLD outside here this weekend. Though, I think with the massive winter storm over the states, most of the country is in the same situation! Cold weather always means it’s time to do some baking. After a trip to a new local bakery this past weekend, I’ve had cookies on my mind. Those chocolate chip cookies there were some of the BEST cookies I’ve ever eaten. Seriously. The BEST.

That is… until I decided to try my hand at making these lightened up Monster Cookies. So what is a ‘monster cookie’ anyway. Welp. It’s basically a monster of a cookie that has a little bit of everything in it. Usually they are peanut butter based and loaded with oats, chocolate chips, and candy-coated chocolates…

Dark Chocolate Covered Rosé Soaked Strawberries

Skinny Hot Cocoa Cookies

Cookies are in season right now, and these Skinny Hot Cocoa Cookies are where it’s at! Their a cocoa flavored chocolate cookie base that’s loaded up with plenty of white chocolate, semi-sweet chocolate, and YES even marshmallows. It’s basically like eating a mug of hot cocoa… if you eat them warm and fresh out of the oven especially!

Even with the naughty bits that are in here, these cookies are sill just over 100 calories each. And what’s better, is that they are actually pretty easy to make! Sometimes cookies can be overly complicated and involved. Not these baddies…

Skinny Eggnog Bread

It’s been a while since I made some homemade bread. And being that it’s baking season, I thought it was high time to made another loaf! I’ve been without my hand dandy bread machine for a long time, so that means that any bread requiring yeast is pretty much out of the question. Yeast, outside of a bread machine use, scares me!

Don’t worry though! If yeast breads intimidate you too, then this Skinny Eggnog Bread is a perfect yeast-free option that is easy to toss together, and requires no kneading and very little hands-on time…

The great Christmas and New Year dessert debate is in full swing! It seems like every year my Mother and I get into ‘the great debate’ over what cookies and desserts we’re going to be making for the holidays. She likes this. I like that. I usually try a few new things out as we get closer and more into the thick of the holidays. Some don’t make the cut, but others become fast family favorites. Skinny Wildberry 'Toaster Strudel' Pie

This past week I played around a lot in the kitchen and made things fun by turning ‘kid classics’ into sweet treats that kids and adults alike will enjoy. Skinny ‘Homer Simpson’ Donuts to Skinny Strawberry Pop-Tart Cobbler. Another of my favorites from my childhood was Toaster Strudels. And being as I had some phyllo dough in the freezer that needed to be used up, I decided to make a Toaster Strudel Pie.

My favorite flavor of both Pop-Tarts and Toaster Strudel was always ‘wildberry’. Something about the perfect mix of sweet and tang in there. This is obviously not your average pie and it’s surprisingly simple and easy to make with literally a handful of ingredients…
