Lightened Up Chicken Spaghetti

I think Chicken Spaghetti is a classic that almost all of us enjoy at one point or another in our childhood. While my mom claims to have made it a few times when I was a kid, I mostly remember trying it for the first time at my grandma’s house. Even though my grandma was the cook of the family, I’m still not sure if it was her or one of my aunts that made the chicken spaghetti.

Farmers' Market Cornbread

While it’s chilly here in Texas, you better believe that I’m taking FULL advantage of it. Which is why tonight I’m making a special sort of soup tonight and this awesome Farmers’ Market Cornbread to go along with it!

Cranberry BBQ Chicken Bites (Instant Pot)

Summers are for BBQs! The only thing is... it's really hot out right now in Texas. I mean... really hot. We're hovering just outside of the three digit thermometer reads, but let me just say that it doesn't feel like it. Since it's so hot out, I'm opting to stay inside where it's nice and cool. And while normally my oven is in shut-down mode for a couple more months, these BBQ chicken bites were worth it to cook inside today!

There's a great debate somewhere out there in this world of ours on whether chili should have beans in it or not. Is it 'technically' chili with or without beans? {Shrug} Who knows? ...Now, being a native Texan... I've got my own opinions on the matter. Halloumi Bake

I used to be a rather picky eater. In fact, I was such a picky eater growing up that my mom and dad had to tell me that beef came from a 'beef tree' so that I would eat it. As I've gotten older, my tastes have changed. My mind has expanded. And my pallet continues to get more and more educated. That isn't to say that my mouth is snobby, just that I'm far more open to new things.

Take goat cheese for instance. I'm an avid cheese lover, and I've never met a cheese I didn't like, but I have often found myself questioning and unsure of goat cheese for some reason. Maybe I secretly deep down don't like goats? Whatever the reason, I try try try my best to stick it through, and when I do... I love goat cheese! So what's halloumi anyway? Well, it's goat cheese. Everyone should know by now that I am a cheese freak. A cheeseoholic. A cheese master. ...I guess one could even say that I'm a bit... cheesy. Buh-dum-psssh. Queso is usually my go-to cheesy wonder of amazingness, but I thought today I would change it up a bit and go with something a bit more traditional and Americanized.
