I’m busy. You’re busy. We’re all busy right now! The Holidays are hot on our heels and it’s a mad dash to the finish line by now. With being a bit under the weather for this past week, I’ve been doing my very best (yet still failing more than once) to feed the house. With that being said, I got wise halfway through the week and started to meal-prep most of the meals.

One-Pot Cheesy Pumpkin & Sausage Soup

Right now, it’s all about the upcoming holidays and the mad rush and hubbub that surrounds them. There’s probably not any more of a chaotic time of year than there is starting now. Meal planning can be tough at this time of year which is why I like to stick to simple recipes and one-pot dishes. To me, creating one-pot meals during the holiday season feels like a true hack! I almost feel like I’m cheating because it makes clean up so easy.

It’s time to get cheesy! Cheese is, and always has been, my achilles’ heal. If there was one food that I could never manage to give up for just about any reason, it would be cheese. I think Chicken Spaghetti is a classic that almost all of us enjoy at one point or another in our childhood. Rustica Salad

Well, I guess I spoke too soon about the weather cooling off. It’s been cooler, yes… but we’ve still gotten well up into the 80’s for a couple of days this week. It’s been nice for the most part, crips mornings, warm days, and cool evenings to follow. And while I’m completely set on Fall and Winter meals now, I still needed to toss in a light salad into the mix this week.

I’m calling this the ‘rustica salad’ because that’s the name of the salad that I got the idea for this one from.
