Egg Roll Soup

November 19, 2018 Amanda Plott
egg-roll-soup9.jpg

If you like egg rolls, and you like soup, then this is the soup for you! Remember a while back when I made that Egg Roll Bowl? Well, this is sort of a winter-ized take on that. It’s an egg roll that’s been turned into a soup!

Yes, all the flavors and components of a good egg roll are here in this soup; including onions, cabbage, carrots, and meat. Even though I made my last egg roll recipe with chicken, I decided to go with turkey this time around. This was for no other reason than texture. It’s low-carb, gluten-free, and ridiculously easy to make all in one pot…

Club Wrap

November 17, 2018 Amanda Plott

I’m busy. You’re busy. We’re all busy right now! The Holidays are hot on our heels and it’s a mad dash to the finish line by now. With being a bit under the weather for this past week, I’ve been doing my very best (yet still failing more than once) to feed the house. With that being said, I got wise halfway through the week and started to meal-prep most of the meals.

This Club Wrap is one of my current favorite lunches. It’s a quick bite that’s light, full of flavor, and perfect for grab-in-go situations. In all honesty, I based this wrap off of one that my mom and I shared a few weeks ago after a long and exhausting trip to the grocery store…

One-Pot Cheesy Pumpkin & Sausage Soup

November 15, 2018 Amanda Plott
pumpkin-sausage-soup7.jpg

Right now, it’s all about the upcoming holidays and the mad rush and hubbub that surrounds them. There’s probably not any more of a chaotic time of year than there is starting now. Meal planning can be tough at this time of year which is why I like to stick to simple recipes and one-pot dishes. To me, creating one-pot meals during the holiday season feels like a true hack! I almost feel like I’m cheating because it makes clean up so easy.

One-pot means less clean up. One-pot means less hassle. One-pot means more time and sanity saved. And this One-Pot Cheesy Pumpkin & Sausage Soup really hits the spot, too. It is so good it will bring friends and family running to your house and to the table! It’s low-carb, keto-friendly, completely delicious, and as cheesy as soups come. Plus, it’s full of all those glorious fall and winter flavors that we all love and crave at this time of year…

Baked Spaghetti Squash & Cheese

November 13, 2018 Amanda Plott
spaghetti-squash-cheese12.jpg

It’s time to get cheesy! Cheese is, and always has been, my achilles’ heal. If there was one food that I could never manage to give up for just about any reason, it would be cheese. I even have a collection of recipes that is strictly devoted to cheesy eats and treats. Yep. My love for cheese goes far.

I’ve made healthier versions of actual ‘macaroni’ and cheese before, but I wanted to try something a little different since I had a giant spaghetti squash on hand that needed to be used up! This Baked Spaghetti Squash & Cheese is legit. Just because there’s no noodles in there, doesn’t mean it doesn’t fit the bill…

Skinny Wildberry 'Toaster Strudel' Pie

November 11, 2018 Amanda Plott
toaster-strudel-pie8.jpg

This past week I played around a lot in the kitchen and made things fun by turning ‘kid classics’ into sweet treats that kids and adults alike will enjoy. Skinny ‘Homer Simpson’ Donuts to Skinny Strawberry Pop-Tart Cobbler. Another of my favorites from my childhood was Toaster Strudels. And being as I had some phyllo dough in the freezer that needed to be used up, I decided to make a Toaster Strudel Pie.

My favorite flavor of both Pop-Tarts and Toaster Strudel was always ‘wildberry’. Something about the perfect mix of sweet and tang in there. This is obviously not your average pie and it’s surprisingly simple and easy to make with literally a handful of ingredients…

Mediterranean Snack Box

November 9, 2018 Amanda Plott

I am completely under the weather today. I’m still not completely sure if it’s the weather, allergies, or if I just flat out have a cold. Nothing much is going to keep me from doing my thing though, so on with the show! Whilst my throat, face, and most of my body hurts… I’ve opted to keep the meals this week simple.

This Mediterranean Snack Box isn’t really a recipe, but more so a meal prep option for lunch! Plus, I have a few hummus recipes that would go perfectly in this box. The 5 Ingredient Roasted Red Pepper Hummus is one of my favorites. But that Roasted Beat Hummus has got to be the most pretty!…
