Spooky scary skeleton! … …I have no idea. It’s a song that my daughter sings. While these aren’t skeletons, or made of bones, these 'Tombstone' Pizza Pockets are super cute and rather easy to make too! What’s better is that YOU get to decide what goes in them and their shape - unlike those frozen-to-microwave ones. You know the ones I’m talking about. The ones filled with a bunch of scary sounding yuck.

These cute little pizza pockets are made with a whole wheat dough and are filled with the basics of any pepperoni pizza; sauce, cheese, and pepperoni! Yep. That’s basically it. A few traditional pizza favorites in a perfect and festive little pocket!…

Pumpkin Spice Bacon Wrapped Chicken Tenders

September 5, 2018 Amanda Plott

This post is sponsored by Tyson Foods, Inc. All comments and opinions are my own.

The start of school means the end of summer, right? Right?! I have to say, that I have just about reached my limit on the heat over here in Texas right now. And I am more than ready for the cooler days of fall that are headed our way. Hopefully sooner than later. It's 100 degrees + here right now and I just can't anymore.

I'm hoping I'll be setting the tone for fall with this Pumpkin Spice Bacon Wrapped Chicken Tenders. What? Pumpkin spice and chicken tenders? Yes! I promise you that it's nothing to be scared of. It's a little outside of the box, but amazingly delicious and is so so SO easy to make with just 5 ingredients. I'm serious, y'all. Just count them!…

Cornbread & Chicken Nugget Cupcakes with Mashed Potato Frosting

July 29, 2018 Amanda Plott

This is a sponsored post written by me on behalf of Tyson Foods, Inc. All opinions are entirely my own.

Back-to-school is on the horizon, and being the mom of an ever growing little, I've found that there's a few tricks to getting kids to eat their dinner sometimes! One of the best ways is to make it fun. Yes, food can be fun and these Cornbread & Chicken Nugget Cupcakes are just that! Fun. It's a savory twist on a cupcake; letting the kids eat with their eyes first.

The base of the cupcake is made with a quick and easy cornbread muffin that's made by mixing together a self-rising cornmeal, cheese, and a creamed corn. This easy cornbread trick is one that I've been using for a couple of years now. And so far, it hasn't let me down yet! From there, the 'cupcakes' are topped with a potato and cauliflower mash 'frosting' which is also made with just a few ingredients…

Summer Squash & Ricotta Pasta

July 6, 2018 Amanda Plott
summer-squash-ricotta-pasta3.jpg

Oyi,  oyi, oyi! We are in the THICK of summer right now. It is H. O. T. - HOT! But, one thing I'm not mad about is the plethora of summer veggies and fruits that comes along with the heat. The summer squash and tomatoes are in season here right now and I am eating it up. Pun totally intended.

Summer squash is one of my favorite veggies, that's because they are so versatile. And while there's a lot of things that you can do with them, I've been craving pasta - so that's where they went today. Not just any pasta though. Whole wheat pasta that's kept light and yet creamy still with some ricotta cheese…

Magical Color Changing Unicorn Noodles

June 26, 2018 Amanda Plott
magical-unicorn-noodles6.jpg

I feel as though I should explain here that my daughter and I are pretty much obsessed with mermaids, unicorns, rainbows and glitter. So when 'science' week started, I just knew that we were going to have to make ourselves some magical color changing noodles!

Unlike most 'colored' noodles out there, we're coloring these naturally by way of a purple cabbage. This gives those rice noodles a beautiful all natural light purple color.

I should also explain here that this is a simple recipe. It's not 'gourmet' by any means. I mean... let's face it, they're basically garlic buttered noodles, but the magic of the color changing and the fun with these noodles are what make them stand out!…

Low-Carb Chili (Keto-Friendly!)

June 19, 2018 Amanda Plott
low-carb-chili11.jpg

There's a great debate somewhere out there in this world of ours on whether chili should have beans in it or not. Is it 'technically' chili with or without beans? {Shrug} Who knows? ...Now, being a native Texan... I've got my own opinions on the matter. And I can honestly say that any chili I've ever been served before has always had beans in it.

But, that doesn't mean that I'm not open to a bean-less version! In fact, these days... it's all about those low-carbs it seems. So when deciding to make my take on my mom's Chili Con Carne for our camp themed week this summer, I thought I'd try my hand at taking all those beans out and instead filling it full of more veggies and protein…
