'One Pot' Skinny Pumpkin Blondies

Out of all the desserts out there, I would have to say that blondies would be one of my favorites! I think it has to do with them being the ‘vanilla’ version of brownies, which is also another favorite. I love that blondies are a more dense and decadent ‘cake’ that almost always involve white chocolate in them.

These 'One Pot' Skinny Pumpkin Blondies are no different, except that they have the flavors of Fall in them. Including pumpkin and plenty of cinnamon goodness, and a few other warm spices!

Crock Pot Pumpkin Spice Oatmeal (Instant Pot too!)

Originally when I made this oatmeal, I had pretty recently posted a Skinny Baked Pumpkin Pie Oatmeal, but these two oatmeals are pretty far apart in the realms of texture and preparation. Plus, I’ve added in new instructions so this oatmeal can be made in an instant pot (pressure cooker) in under thirty minutes!

As usual, I've been running around like a crazy woman and I really needed a pick-me-up this morning to help boost me through the day. Skinny Pumpkin Spice Dark Chocolate Truffles

Pumpkin spice and everything nice, that’s what these truffles are made out of! These little cuties are surprisingly easy to make and are pretty impressive, if I do say so myself. Making candies is sort of one of those kitchen fears of mine that ranks up there even higher than most baking projects! I suppose that’s because candy making and baking are the more scientific limbs of cooking. And I am no scholar.

Even so, I like to push myself to limits and test my skills when I can. Nothing good ever came out of fear of failure! These sweet treats are as simple as candy can be to make, filled with a delicious pumpkin spice cream cheese mixture that everyone can enjoy this fall! (Or any time of year really!)…

The start of school means the end of summer, right? Right?! I have to say, that I have just about reached my limit on the heat over here in Texas right now. 'Nut & Seed' Grain-Free Pumpkin Spice Granola

It's been a hot minute since I made up a batch of homemade granola, mostly because it's just been way too hot here to even think about turning the oven on. But, sometimes... it's just worth it. And this morning? It was just that - totally worth it! With pumpkin spice season on the horizon, I thought there was no better time than now to tempt the cooler weather in with another pumpkin inspired treat!

I based this grain-free granola off of one that I made a while back. The main differences would be the spice used in it and the seeds that I chose to include. Since we're going with the Fall theme, I decided to use pumpkin seeds. Two kinds of pumpkin seeds, that is. I picked up a raw one to roast with the granola, and a lightly salted roasted seed called 'snow white' pumpkin seeds to add in at the end…

My mom has this infamous chili recipe that she's made for many years now. It's something that the whole family can agree on. We all love it. It always became a staple in the family's weekly meal plan during the cooler winter months.
