Buffalo Chicken Nachos & Blue Cheese Sauce

August 10, 2018 Amanda Plott
buffalo-chicken-nachos14.jpg

I... love buffalo chicken. I love it so much that I think I have a well rounded plethora of things I've made in the past. Even so much that I decided I had to take a break from it for a while before I burned every (including myself) out on it.

Being as it's been a hot minute since I've done anything with buffalo flavors, and it's been on my mind a lot, I thought it was time to go and get myself a shiny new bottle of the old favorite. Since I've done my fair share with buffalo sauce in the past, I knew this time around I wanted to do something a bit different. Nachos. ...With - wait for it - ... ... bleu cheese sauce…

Simple Greek Quinoa Bowl

August 7, 2018 Amanda Plott
greek-bowl4.jpg

I'm leeeaving on a jet plane, I don't know when I'll be back again...

Okay, not really. But. I am leaving on a jet plane this coming Sunday for nice little vacation. But... before all of that - I've got to get through the week of chaos that is in full swing. We're talking shopping, packing, laundry, lists, chores, instructions, and so on.

As excited as I am, and as much as I have to do, I thought I would keep this week pretty simple with some rather minimal recipes.  I don't want to have a bunch of leftover madness going on in my fridge while I'm away. So! That's where this super simple Greek Quinoa Bowl comes in…

Whole Wheat Fresh Cherry Cobbler

August 5, 2018 Amanda Plott
fresh-cherry-cobbler10.jpg

It's the end of summer (break) and cherries are still in season over here. And since I haven't really done anything with them yet this season, I thought it was high time to do so! To create this lovely cobbler, I started with the base of the one that I made about a month ago. I have used the same recipe a few times now, trying out different fruits.

Up until today, the blackberry seemed to be the favorite.

The only real difference between this version of the cobbler recipe, and the one from before, is that this one I decided to use the cherries and also subbed in some whole wheat white flour instead of the all-purpose…

Southwest Egg Bites (Instant Pot)

August 3, 2018 Amanda Plott
southwest-egg-bites9.jpg

I've had a rough couple days of it. There were two recipes that I was SO excited about sharing, but... in the midst of testing them, they didn't turn out nearly as well as I had planned. They both tasted great. But, there was just something off about the process and the directions. ...Which means that I've still got some work to do.

So needless to say, it's been a couple of days in between recipes again. Which is not my favorite thing to do. I would much rather keep it fresh and new around here. But, I also don't want to put anything up here that I am not completely happy with. If I'm stressing over the cooking of a dish, that means you will be too! And that's just no good.

That's why today I woke up bright and early and reverted back to one of my current FAVORITES. Egg bites…

Chicken Faux Pho (Instant Pot)

July 31, 2018 Amanda Plott
faux-pho8.jpg

For a good long while now I've heard nothing but good things about pho. And to be honest, I've never given it a try. My brother swears by it and about the time that my hair stylist said the same thing, I knew it was going to have to happen. So, when I was planning out my meals for the week, I decided that I was going to dive head first in and make a quick and easy version of pho.

...And let me just tell you... it's pho-king delicious.

This pho isn't what I would call traditional. It hasn't spent all day cooking down in it's broth, and the ingredients are pretty minimal. The most of what's going on here is spices and fresh veggies - which I am anything but mad at…

Cornbread & Chicken Nugget Cupcakes with Mashed Potato Frosting

July 29, 2018 Amanda Plott
cornbread-chicken-cupcakes5.jpg

This is a sponsored post written by me on behalf of Tyson Foods, Inc. All opinions are entirely my own.

Back-to-school is on the horizon, and being the mom of an ever growing little, I've found that there's a few tricks to getting kids to eat their dinner sometimes! One of the best ways is to make it fun. Yes, food can be fun and these Cornbread & Chicken Nugget Cupcakes are just that! Fun. It's a savory twist on a cupcake; letting the kids eat with their eyes first.

The base of the cupcake is made with a quick and easy cornbread muffin that's made by mixing together a self-rising cornmeal, cheese, and a creamed corn. This easy cornbread trick is one that I've been using for a couple of years now. And so far, it hasn't let me down yet! From there, the 'cupcakes' are topped with a potato and cauliflower mash 'frosting' which is also made with just a few ingredients…
