Low-Carb Chicken Egg Roll Bowl (Keto-Friendly)

Alright, so I've been playing around with this recipe for a few months now. I keep telling myself every time I make it, that I'm going to take the pictures and post it up here. But, for one reason or another, it just hasn't worked out until now!

So, with life being crazier than usual (or maybe it's really just the same amount of crazy), I decided to have a more simple sort of dinner today. Simple in a lot of ways. Simple to make. Simple to eat. Simple to enjoy.

I started out with some sirloin steaks and a head of broccoli and ended up with a pretty fabulous take-out fake-out meal that was quick, easy, and delicious. With keeping this simple, I thought that instead of having rice, I would rice my broccoli. Why not? I've made cauliflower rice before, and broccoli is pretty similar texturally. Vegan Lentil Taco Salad Bowls

A couple of weekends ago we went to the local water park for some fun in the sun. And while there we all got hungry and one of the options that I saw floating around the park was a taco salad. I'm not about to lie. It looked like heaven in a tortilla shell, but I know all too well that most salads out there pack just as much (if not more) calories and junk in them than the other options on the menu.

Naked Summer Burger Bowls

Y'all! It's been so busy around here ever since my daughter got out for summer. I mean... yikes! The day after my little one got out of school, we took a quick overnight trip a couple of hours away to see my mom and hang out at the drive in movie theater there near her place. It was so much fun and a great way to kick off summer vacation! Today though? It's back to reality and the real world.

Mediterranean Quinoa Bowls

I've been on a mediterranean kick lately. Can you tell with my Mediterranean Toast and now this Quinoa Bowl? I have always been a fan of Mediterranean and Greek inspired dishes. I think it's the mix of savory, salty, and the bright bold flavors that go along with it. This bowl starts out with a simple cooked quinoa on the bottom and goes from there. It's light enough to enjoy as a simple dinner and yet hearty enough to have as a filling lunch.

For this bowl, I kept it traditional with fresh tomatoes, zucchini and lemon. To get some salt in there I added greek olives, feta, and of course those artichoke hearts. The avocado is there for some smooth creamy healthy fats that you can use along with the lemon juice as a dip/spread/dressing for everything else. And... who doesn't love avocado anyway?...

It's time to get serious for a minute, folks! When I was in high school my family came in on some pretty rough times and there were some scary moments when my mom even admitted to me that she 'didn't know what she was going to put on the table'. Life was hard and things were a struggle, but we made it through together as a family and were much stronger when we came out the other side because of it.

I learned a great deal from my experiences during those high school years. I'm definitely more mindful and knowledgeable about certain things in life; money and food being two of them. Let's just say that my brother and I can rock the socks off cooking ramen noodles.
