Strawberry Grain-Free Granola (Gluten-Free too!)

Holy. Moly. We are well into the 90 degree days here in Austin Texas and summer is nipping at our heels. The house is stifling in the days, and even while the mornings are still decently cool, I am over here preparing for the onslaught that is about to befall us with raging 100 degree + days.

As the weather turns warmer, I'm starting to lean towards the cooler and more refreshing bites for breakfast. Cereals. Yogurts. Fruits. My only problem is that all the good granolas out there cost a pretty penny. That's why I've been opting to make my own. Plus, I love being able to make my own unique flavors and there is nothing more Summery to me than strawberries. Here in Texas, the strawberry season starts in Spring and seems to go almost all Summer long. We even have a festival for strawberries here in the summer! What's up Poteet Strawberry Festival!…

Roasted Beet Hummus

There isn't much that's prettier than this hummus right here. I mean... look at it. It's perfectly gorgeous. Roasted beets make for the beautiful fuschia pink hue in this hummus that is sure stand out any time of year but especially around Valentine's Day.

Hummus is super easy to make, and it will save you a ton of money to make yourself too! Plus, you have complete control over what goes into it. And let's face it... It's just fun to eat pretty stuff. You eat with your eyes first...

Skinny Red Velvet Cake with Cream Cheese Frosting

When I think of Valentine's Day, I think of red velvet cake. I think that's because it's so perfectly bright and red and just looks like it's full of love. And this one right here? It's made with love too.

As far as cooking goes, baking has always been one of my favorite things to do. Even though it can be one of the most difficult, especially when it comes to adjusting and altering recipes to be better-for-you. Let's face it, baking is a science and requires it's fair share of accuracy. There's very little wiggle room for error, which makes me a nervous mess. Trial and error are the name of the game...

Honey Beer Cupcakes with Fresh Blueberry Buttercream

My dad's birthday always falls around Father's day, which usually means... double the celebrations! Some of his most favorite beers are from the local Austin brewery, Infamous Brewing Company. I've had the honor of meeting the owner (Josh) and hanging out at the brewery a few times. They've won a LOT of medals for their selection of regular and seasonal beers. Their Pumpkin Massacre is a family favorite when it comes around in the fall.

Their brewery was literally right down the street from my parents when they lived over near the  lake. Now it's a bit of a trek for either of us, so unfortunately we don't get to go there much anymore. The good news is that they sell Infamous beer in almost any store here around Austin and most of Texas too. If you can't find Infamous near you though, you could always use another beer of your preference for these cupcakes...

Quick Pickled Radishes & Carrots

I'm a little bit of a pickle fiend, y'all. I always have a jar (or several) of pickled vegetables of almost any variety in my fridge at all times. This past week I got my hands on some local radishes and well, I'm honestly not the most familiar with radishes. I know they are a little 'peppery' unless cooked, so part of me really wanted to try them roasted.

But, the pickle loving part of my decided to go another route since I had some verde chicken street tacos on the dinner plan. Street tacos always need something on them with a little tang and pop to brighten them up. Some people use a lot of lime juice for this, and others use pickled jalapeños or radishes...

Healthified Home-Corned Beef

I've always been a bit intrigued with St. Patrick's day. Perhaps it's because I've got some Irish roots. It could also have something to do with some over zealous teachers when I was in elementary school making a big hub-ub about the holiday. I remember that we had a little Leprechaun visit our room, and all though none of us children saw him he managed to leave glitter and rainbows in his wake. As far as I remember he did some rather naughty things too. Turned desks upside down and even turned our milk green. Those mischievous and sneaky little Leprechauns!

When I started making corned beef a few years back, I began doing so with the pre-brined corned beef briskets that you can buy at the store.
