Spinach & Artichoke Mediterranean Burgers (Lettuce Wrapped)

Just about everyone enjoys a good burger. Especially during the summertime when grilling season is in full swing! I don't know about you, but I always like to play around with burger flavors. I guess that started some years back now when I was in high school and my parents started buying these 'fully loaded' burgers from a local grocery chain. They were always delicious but super expensive! I knew even then how easy they would be to make ourselves at home, and how much cheaper and better they would be too!

Mediterranean Chickpea Salad

With the schedule around my house changing up a bit recently, I've had to make some adjustments to when and how I cook. So, I've been cooking a lot less and mostly just for myself since my little one is still a rather picky eater and lately dinner time is our mommy-daughter time.

That being said, dinner time for me has included quicker, easier dishes that are either meal prepped or a one and done toss together sort of salad. Mediterranean Bowl

So, originally I was going to call this a 'breakfast' bowl, but then I started to realize that you could eat this for just about any meal. If you want it more 'breakfast' style you could cook the eggs scrambled or poached. For lunch? I prefer the hardboiled! Making it into dinner? Toss in some grilled chicken.

With all of that being said, I decided it was best to just call it the Mediterranean Bowl, and not label it with a specific meal type. No matter when you decided to enjoy it, it's packed with loads of nutrients and good-for-you stuff...

Avocado Chickpea Feta Salad

Who doesn't love a good cool avocado dish on a hot HOT summer day? Okay, you caught me. I'm not going to lie. I love avocados year round, but there's just something about them during the summer that just brings even more joy and rapture to my soul.

This 'salad' is being called a salad because it sort of reminds me of what a vegetarian style 'chicken salad'. Over the lifetime of The Skinny Fork, I've been blessed to see such growth between myself and the blog. As strange as it may seem, we both seem to push the other to our limits in mostly positive and amazing ways. I'll be honest in saying that I'm a bit of an introvert. Roasted Beet & Pistachio Salad with Citrus Poppyseed Vinaigrette

Can we just take a moment to enjoy and revel in the natural beauty of this salad? Just take on all the glorious colors that are straight from nature's bounty! Reds, yellows, greens, oh my! This salad is truly one of the most bright and vibrant things you could put on a plate. Naturally. Over the past couple of weeks, I've been collecting a montage of beets from my local produce box and for the first time ever... I got my hands on some golden beets!

Don't worry though, I also have a plethora of traditional red beets too for those traditionalists out there. I love beets. All the beets. Red. Yellow. It doesn't matter.
