Strawberry Grain-Free Granola (Gluten-Free too!)

Holy. Moly. We are well into the 90 degree days here in Austin Texas and summer is nipping at our heels. The house is stifling in the days, and even while the mornings are still decently cool, I am over here preparing for the onslaught that is about to befall us with raging 100 degree + days.

As the weather turns warmer, I'm starting to lean towards the cooler and more refreshing bites for breakfast. Cereals. Yogurts. Fruits. My only problem is that all the good granolas out there cost a pretty penny. That's why I've been opting to make my own. Plus, I love being able to make my own unique flavors and there is nothing more Summery to me than strawberries. Here in Texas, the strawberry season starts in Spring and seems to go almost all Summer long. We even have a festival for strawberries here in the summer! What's up Poteet Strawberry Festival!…

Mornings are rough. Even on the weekends, I find it hard to get myself together early enough to make real honest to goodness breakfast and have it on the table. I think it would technically be brunch by the time I get anything worthy together. But, it doesn't have to be that way. I have found that make-ahead breakfasts are where it's at.

Portobello Pizzas

We are a houseful of pizza fiends, y'all. I'm pretty sure that we collectively eat pizza in some form or another at least once a week. My almost 8 year old nearly demands it. Pizza has always and will always be a part of our regular rotation here. So, sometimes I have to get pretty creative when it comes to my pizza.

Spring Chicken Soup

I may not be a spring chicken anymore, but this soup sure is! Just because it's Springtime, doesn't mean that we have to quit eating soup. Let's face it, sometimes you just want a good meal in a bowl to warm your soul, and that's what this soup is meant for! Even if it is warming up outside.

I'm going to hold onto Spring for as long as I can and go kicking and screaming into the hot blazes of another Texas summer.
