Just because the holidays are over doesn't mean that the entertaining has stopped. At least, that's how it is around my place. I like to think of my house as the central hub. The neutral territory. THE place to be. At least once a week there is something going on and I've got a house full of people.

My daughter and I are usually outnumbered by the boys too. Even when my mom comes to visit, if you're counting the animals, we're still outnumbered by at least 2 to 1. So more often than not, when there are people over, I like to stick to food that I know the menfolk will enjoy while also trying to keep my womanly figure. It's the new year and we're all making strides towards our health goals right now. Hooray! This year, along with still eating a bit less meat, I'm also lowering my carb intake. While I've got no plans to be plant-based entirely, I always figure the more plants in my life, the better.

Okay, so there really isn't enough good things that I can say about this soup. I actually made my first attempt at this soup a few years ago. Long before I originally posted it here. My in-laws were in town and I knew that this soup from a well-known restaurant happened to be one of my father-in-laws' favorites. Since he's a health-conscious individual such as myself, I thought it would be fun to try my hand at making a healthier version of it for him.

I hadn't had the soup before, so I couldn't say at the time if it was anything similar to the one that he was used to, but he did have a couple of bowls of it for dinner! Me? I was anything but a fan. Why? One word. Kale.

Yes, I've ranted on before about my strange love/hate relationship with kale. And, this is basically where the hate part of that started...

Healthified Crockpot Low Country Chicken Boil

My local box of produce over the past couple of weeks has gifted me with a bounty of red potatoes that I can't bare to let go to waste! My mother asked me a couple weeks back about this recipe that I had put together a couple of years back now. With my brother not being a seafood eater and my dad being mildly allergic to shellfish, she wanted to put together a Low Country Boil that omitted the shrimp or crawfish. Being as I'm not a seafood fan either, I had tried my hand at a seafood-free low country boil, like I said though, this was a couple of summers ago.

So with an idea in mind and plenty of red potatoes to go around, I got to work on my Low Country Chicken Boil once again. Here among the southern states, summer time is when everyone starts to have crawfish boils! It's always sounded amazing to me; sausage, potatoes, corn - who wouldn't like it? Well, me! If you haven't noticed yet, I'm not a seafood eater. I wish that I could be, but it just isn't a possibility. Sadly...

Skinny Juicy Lucy Meatballs

Remember when I made those fantastically cheesy Healthified Juicy Lucy Burgers? Yeah, well they now come in meatball form! And just in time for gameday too. For these meatballs, I took my favorite cocktail meatballs and those Juicy Lucy Burgers and fused them together to make one epic appetizer. They're easy to make, full of flavor, and what could be better than a gooey cheesy stuffed meatball?

Not a lot.

So just to be clear, these are not your average Italian style meatball. Oh, no. These are an americanized modge-podge if ever there was one. I do have a more traditional stuffed meatball if that's more of what you're looking for (also made in the crock pot along with a sauce.)...

I saw this fabulous idea a long time ago on Pinterest, and I just knew that I had to make a version of it for myself. I've never been one for frying things and I will do just about anything I can to lighten up food; whether it be lessening the calories, using more wholesome ingredients, or some other clever way in which I see fit.

These Breakfast Egg Rolls with Sausage Gravy are where it's at! This has to be one of the most tasty and fun breakfasts that I've put together in a good long time, and it's just a pity that I was the only one home this morning to enjoy them. Oh, well... maybe next time I'll have some company over to feed!...
