Low-Carb Broccoli Cheese Dip (Slow Cooker)

March 26, 2018 Amanda Plott
broccoli-cheese-dip8.jpg

Everyone should know by now that I am a cheese freak. A cheeseoholic. A cheese master. ...I guess one could even say that I'm a bit... cheesy. Buh-dum-psssh. Queso is usually my go-to cheesy wonder of amazingness, but I thought today I would change it up a bit and go with something a bit more traditional and Americanized.

What's more American than broccoli and cheese? Besides Apple Pie or Baseball. Neither of which would make for a very good cheese dip...

She shoots... she scores! Annnd the crowd goes wild!

These Skinny BBQ Beef & Cheddar Bites are a slam dunk! As a Texan, I'm a girl that knows her way around both game-day and BBQ. So, when I'm trying to get into the spirit and prepare for the big tournament, I more often than not combine the two into one perfectly popable bite!

I know that with planning on watching a game with friends and family, it's best to make snacks that are quick, easy, and mostly hands off. That's why I love to use my electric pressure cooker and a few other kitchen hacks along the way...

Spring is upon us here in Austin Texas, which for me means entertaining friends and family... and also means it's time for deviled eggs. Not just any deviled eggs though, we're talking fully loaded in a way that I never really thought of before. These Bacon & Cheddar 'Fully Loaded' Deviled Eggs are perfectly simple to make and YES... are as fully loaded as they can come; with bacon, greek yogurt, green onions and even their fair share of cheddar!

Deviled eggs are a go-to appetizer or snack for me anytime I'm playing hostess. Why? The reasoning is simple, just as simple as they are to make! The ease of making deviled eggs is what puts them at the top of my list; boil eggs, mix, fill and chill! That's all there is to it. Plus this 'fully loaded' version takes the classic up a notch (or several) for one beautiful bite of deliciousness!...

Healthified Gorgonzola Port 'Blue Cheese' Dressing

February 27, 2018 Amanda Plott
gorgonzola-port5.jpg

I've been trying for years now to create a perfect blue cheese dressing/dip. I think that I've gone through a good ten different recipe variations by now, and none of them have really stuck. None of them were to the level that I wanted. None of them impressed me... until now.

I had all but given up in my quest. But then, my desire... nay, my need for a good homemade blue cheese dressing started back up a couple months back when I went to dinner at one of my favorite places where they happen to serve a salad that's served with a gorgonzola-port dressing...

Low-Carb Bacon & Cheddar Sous Vide Egg Bites (Instant Pot)

February 21, 2018 Amanda Plott
sous-vide-egg-bites10.jpg

If you haven't been struck by the Sous Vide Egg Bites bug yet, then you don't know what you're missing! My first experience with egg bites was at none other than Starbucks after hearing all the hoopla surrounding them. And let me just say, they did not disappoint. They're soft and fluffy and full of yummy little bits of flavor bomb awesomeness.

Being as they were a little costly though, I thought I could do myself a service and find a way to make them for myself at home; allowing me to change up the flavors and save me a few dollars along the way...

Healthified Broccoli Mac-N-Cheese

February 13, 2018 Amanda Plott

I still can't believe that The Skinny Fork is almost 5 years old! As time goes on, I continue to go back and revisit older recipes, and this is just one of them that desperately needed an update in the looks department. As usual, everything else has remained the same!

Mac-n-cheese is purely a comfort food. It is one thing that is always in stock in my home and one of the few things that I can count on my daughter readily filling her belly with - without any epic battles...
