By now we all should be well aware of the fact that I am completely smitten with two things; my Instant Pot and St. Patrick's Day. So, this week I thought... why not put the two together? But could it be done? I've made my fair share of corned beef before and I thought it would be the perfect Irish bite to go from crockpot to Instant Pot.

Weekends are for being lazy, and there is truly no more of a lazy way to cook steel cut oats than inside of a pressure cooker. I got my instant pot back for my birthday I think and I am absolutely in love with it. Not only does it work as a pressure cooker, but also as a slow cooker; which saves me valuable cabinet space.

The New Year is on the horizon and I couldn't be more excited! I've got my brother and my nephew in town visiting and one thing that my brother requested I make for dinner one night while he's here is Beef Stew!
