Collard Green (Tortilla-Free) Enchiladas

Over the past couple of weeks, I've gotten a lot of local collard green leaves in my farm box that I just wasn't too sure what to do with. They're HUGE leaves too, and while most people in the south chope them up and cook them forever... I really wanted to make as much use out of their enormous size as I could manage.

So, with life being crazier than usual (or maybe it's really just the same amount of crazy), I decided to have a more simple sort of dinner today. Simple in a lot of ways. Simple to make. Simple to eat. Simple to enjoy.

I started out with some sirloin steaks and a head of broccoli and ended up with a pretty fabulous take-out fake-out meal that was quick, easy, and delicious. With keeping this simple, I thought that instead of having rice, I would rice my broccoli. Why not? I've made cauliflower rice before, and broccoli is pretty similar texturally. I can hardly believe that yesterday was the first day of my daughter going to second grade! Time just flies these days, even more so when it's time for back-to-school. Instant Pot Summer Vegetable & Chicken Curry

I've kind of completely and utterly fallen in love with my new pressure cooker, y'all. Before I got this baby, I was all about the slow cooker. But, now? Just toss it in the pressure cooker for a few minutes and you've got yourself a full on meal that would have taken HOURS in the slow cooker. And the best thing is, if you like a slow cooker - it can slow cook too! It's amazing for one pots too, like this curry right here.

Curry is another one of my favorite 'use up leftover' meals. No matter what veggies or meat you have on hand, you can most likely make a curry with it...

Healthified Crockpot Low Country Chicken Boil

My local box of produce over the past couple of weeks has gifted me with a bounty of red potatoes that I can't bare to let go to waste! My mother asked me a couple weeks back about this recipe that I had put together a couple of years back now. With my brother not being a seafood eater and my dad being mildly allergic to shellfish, she wanted to put together a Low Country Boil that omitted the shrimp or crawfish. Being as I'm not a seafood fan either, I had tried my hand at a seafood-free low country boil, like I said though, this was a couple of summers ago.

So with an idea in mind and plenty of red potatoes to go around, I got to work on my Low Country Chicken Boil once again.
