We made it! I finally got back from our end of the summer spur of the moment vacation road trip across two states with just myself, my mom, and my little girl. It was a blast! The girl trip that we've always wanted with three of our four current generations of ladies among my family.  That being said, we literally got home with one day between us and back-to-school! Healthified Crock Pot Kalua Pork

Summer time around here (especially July) is when my mom always likes to throw a mostly annual luau. Unfortunately, she hasn't really been able to do that for the past couple of years, just because they had moved about an hour further away from me and well... all of their friends basically too. Either way, this is one of our family favorite recipes for these such luaus! And with it being nearly July, I thought it would be a great time to update this Kalua Pork with a bit of a facelift.

So, what do you do in Hawaii? You go to a luau. What do they serve at a luau? Kalua pork.

Kalua (as not to be confused with Kahlua) is a traditional way of cooking pork in Hawaii. The word kalua actually translates to 'to cook in an underground oven'. While they use something in Hawaii called an imu for this process, I don't readily have one of those at my disposal... so I used the next best thing. My slow cooker!...

Summer Breakfast Scramble

Today is bittersweet! It's the last day of my daughter being in the first grade. Eek! Where does the time go? Somewhere in between rushing her around to school this morning and dealing with a bit of a family emergency, I had to find time to get some food in my system. Since we're on the verge of summer, I thought it would be a great time to make myself a fun summer inspired breakfast scramble!

Quick Pickled Radishes & Carrots

I'm a little bit of a pickle fiend, y'all. I always have a jar (or several) of pickled vegetables of almost any variety in my fridge at all times. This past week I got my hands on some local radishes and well, I'm honestly not the most familiar with radishes. I know they are a little 'peppery' unless cooked, so part of me really wanted to try them roasted.

But, the pickle loving part of my decided to go another route since I had some verde chicken street tacos on the dinner plan. Street tacos always need something on them with a little tang and pop to brighten them up. Some people use a lot of lime juice for this, and others use pickled jalapeños or radishes...

Healthy Freezer-Friendly Breakfast Burritos

I'm all about breakfast lately, but it's often difficult to find the time to be able to make myself something that's tasty and wholesome. I've tried to make freezer-friendly breakfast burritos in the past, but they never worked out quite the way that I wanted. Live and learn I guess, so I decided to give them another go with a few changes.

The first lesson that I learned was that freezer-friendkly breakfast burritos must be individually wrapped to keep them from sticking together. We're almost to the middle of the week, and if you're anything like me the craziness is only just starting to settle in!
