Lemon Poppy Seed Bread & Pink Grapefruit Glaze

February 23, 2017 Amanda Plott

Alright, alright... so not every recipe goes as planned. Sometimes I feel like I live in a test kitchen over here. Some things work out perfectly and amazing the first time, but other times... not so much. Baking is hard y'all. It's true what they say, that baking is both a science and an art. Trust me. I have kitchen woes just like anyone else, and this recipe right here is evidence of that if nothing else.

I've had it in my little head for a few weeks now that I wanted to make a lemon poppy seed cake/bread. However, my first attempt was a complete flop. And what's worse? I thought even up until I took it out of the oven that it was going to be great. The batter tasted great. It rose perfectly in the oven, doing everything it was supposed to do before POOF it collapsed into a dense mess of super sad lemon bread. Sigh...

Lightened Up Coffee Cake

February 3, 2017 Amanda Plott

So once again I have a confession to make. This past Christmas my mom came over with this coffee cake that she had received as a gift from her boss at work. He got everyone in her office, plus all of their clients one of these coffee cakes. Now... generally I'm not the hugest fan of coffee cake. it's too crumbly and dry for me. However, this coffee cake... holy moly! It was decadent, buttery, and just the perfect amount of sweet. Yum!

I had that cafe from breakfast and dessert for a couple of days. You know, I'm all about plotting yourself those occasional treats. The coffee cake was made by a local Texas bakery which I intend to visit one day since it's only about an hour away. Though I might have to be dragged out by my hair kicking and screaming along the way. Haha...

I hear jingle bells starting to ring off in the distance! I for one, am not going to be on Santa's naughty list this year though. This Skinny Sugar Cookie Cheesecake Dip is as nice as can be with just a handful of simple ingredients and the most amazing frosted sugar cookie taste you'll find in anything other than the real deal. Sprinkles included!

Yep! That's right, Santa. You can enjoy this tasty sweet treat and still be able to fit back up the chimney at the end of the night. *Wink, Wink.* This dip is perfect for setting the mood for the holidays, which for me are always full of warm and happy memories. I love how whimsical and fun while this dip is, while also being a light and a welcome addition to any table. Plus, no one will ever guess that it's been lightened up, because it just tastes that good!...

My little girl is 6 years old now and is a little eccentric. She's a lefty and as such is incredibly creative and imaginative. Needless to say, in this house, we 'believe' in magical things like fairies, unicorns, mermaids, leprechauns, and so on. That's what childhood is for, right? Magic, wonder, and all things amazing.

Childhood is a thing worth celebrating.

Of course, this Unicorn Ice Cream Cake would be amazing for any holiday or celebration and the bright and super fun colors are completely versatile and up to you to get creative with. Maybe there's a back-to-school unicorn around your house with the primary colors? Or a holiday unicorn with red, green, and white? Today though? It was all about the infamous rainbow unicorn...

Chipotle & Spinach Quinoa Cakes

August 16, 2016 Amanda Plott

I'm not sure really who knows this yet or not, but I sort of have a giant fear of eating fish. I know, I know! It's a problem that I've been dealing with my entire life. I wish that I could bring myself to eat seafood at all. So far though, I haven't found success with it. What I tend to do instead, is make an otherwise fish-related recipe into something vegetarian.

I've always been curious about 'fish cakes', since they look like they could be mighty light and tasty if done right. In the past, I've made Chickpea & Quinoa Cakes, which turned out really good. But, today I wanted to try something a little different; adding in a kick of spice and bright bold Mexican-style flavors...

'Drunken' Birthday Cake Gummy Bears

June 13, 2016 Amanda Plott

My birthday is coming up in a week, and so of course... this just had to happen.

I've been chewing on the idea of soaking some more gummy bears, since last time was rather well enjoyed by all. With my birthday just around the corner, I wanted to change it up a bit and make things a bit more festive. And what says birthday better than cake?

One of my most favorite cakes is funfetti or confetti cake; white cake with plenty of rainbow colored sprinkles. So, that's sort of where the idea of this started to come together. What could I possibly soak rainbow gummy bears in that would be birthday-esque?...
