I'm a southern girl, born and bred (even through I spent a lot of my youth moving around the continental United States.) Home is where the heart is and my heart is in Texas, so... I'm a southern girl. One thing we have in the south that tends to throw northerners off, is pimento cheese. I've actually got friends that have never heard of pimento cheese!

That always blows my mind. How does anyone not know what pimento cheese is? I practically grew up on the stuff! It's one of my favorite things around the Spring and Summer too. Just a plain ole' pimento cheese sandwich made on white bread that's so soft it sticks to the roof of your mouth like glue... Ooooh yeah. That's the stuff right there...

Healthy Freezer-Friendly Breakfast Burritos

I'm all about breakfast lately, but it's often difficult to find the time to be able to make myself something that's tasty and wholesome. I've tried to make freezer-friendly breakfast burritos in the past, but they never worked out quite the way that I wanted. Live and learn I guess, so I decided to give them another go with a few changes.

The first lesson that I learned was that freezer-friendkly breakfast burritos must be individually wrapped to keep them from sticking together. We're almost to the middle of the week, and if you're anything like me the craziness is only just starting to settle in! I know that it can sometimes be a struggle to make the right decisions for a more wholesome dinner option when in the chaos of the week. Skinny Juicy Lucy Meatballs

Remember when I made those fantastically cheesy Healthified Juicy Lucy Burgers? Yeah, well they now come in meatball form! And just in time for gameday too. For these meatballs, I took my favorite cocktail meatballs and those Juicy Lucy Burgers and fused them together to make one epic appetizer. They're easy to make, full of flavor, and what could be better than a gooey cheesy stuffed meatball?

Healthy Macaroni & Cheese

So, I've been working on this top secret recipe right here for a while now. And I say that it's top secret because if my little girl knew what was in it, she would instantly turn her nose up at it. I've made a handful of mac-and-cheese recipes in the past. Some were good. Others were terrible. None of them were what I could consider a viable option to really sneak past my six year old and pass off as plain jane macaroni and cheese.

Like I said, it's been a work in progress. That is... until today. (Well, actually it was last week that I had the initial success and knew that the recipe was ready to share.) Today I got my little mac-and-cheese aficionado to eat her macaroni and a good heaping serving of vegetables hidden along inside it. Don't worry though, this mac-and-cheese is so creamy rich and perfectly saucy that you will never guess there's veggies tucked away in it.

It's no secret that this week has been kicking my tail, though more so in a humorous way at this point. I couldn't even list out the amount of things that have gone wrong because it's almost been everything that I've been a part of or a hand in. I'm pushing past it though, and rocking it out now that it's the weekend.
