Things are pretty crazy around here right now as I'm sure it is everywhere else. Somewhere between schedules, fitness, and seasonal changes, I seem to have gotten lost and have little to no spare time. With cooler weather starting to roll in, the light changing, and the days getting shorter, I'm all the more ready for fall and the peace and comfort that comes with it. Bring it on.

Cilantro-Lime Coconut Rice
Let's see... the first time I had cilantro-lime coconut rice was quite a few many years back now. Right about when I first started getting into cooking. As far as I can remember, my mom and I were trying to come up with a rice to go with a Thai inspired dish that wouldn't be quite so traditional.
I remember that I was more than a little apprehensive because coconut is not one of my favorite flavors and I hadn't yet really been exposed to the wonderfulness that is coconut milk. My attitude towards coconut started to change with this rice right here.
One of the great things about cilantro-lime rice is that it can pair well with almost any Asian, Thai, or even Indian style dish. Yes, I've been known to sneak it in with a Mexican style dinner as well, though I usually leave the coconut milk for that variation!...

"Breakfast is the most important meal of the day."
That is something that I think anyone of my generation grew up learning, and to this day I still find it to be true. Starting your morning off right can be essential. Especially when you're trying to eat better and become healthier.
This powerhouse breakfast bowl is not only one of my favorite breakfasts, it's also a great way to control your hunger and power you on through your day. It's full of the good-for-you stuff such as protein, fiber, calcium, and plenty of vitamins, and minerals. And yes, even antioxidants!
I would say that this could be comparable to a bowl of warm oatmeal or a breakfast rice cereal as far as flavor and texture. So if you're a fan of either, then you're sure to enjoy quinoa for breakfast.
Oh, and did I mention that this breakfast is entirely gluten-free and vegan? Yep!
I know, there's a fierce debate about whether honey is vegan or not... but, for the sake of this breakfast I'll say that it is. If you're a staunch vegan, you can always swap the honey out for agave...

I remember back when I was little, my mom would make my brother and I 'Breakfast Rice' which was full of butter, sugar, and warm milk. It. Was. Fantastic. Truly one of my fondest breakfast memories.
My little girl has been a rather picky eater for the last year or so. Thankfully, I have been able to get her to at least try new things over the most recent months. I'm not generally one for shakes or smoothies. I think there's something mentally about a thick milk drink that I almost find unsettling. Or maybe it's that I'd rather eat my calories rather than drink them. But... I know there's a lot of people out there that absolutely swear by them (including my grandma!)
