Skinny Pumpkin Spice Cream Cheese Crepes

Last weekend my dad was here to visit for a few days, and that always means that I get spoiled on crepes. The man is basically famous for his crepe making skills, and naturally I'm always pushing him outside the box with interesting flavor ideas. We've done everything from red velvet to a more savory chive and cheese crepe. His go to combination is and has always been a plain crepe with a strawberry cream cheese filling, and trust me when I say that those are absolutely out of this world.

But... it's pumpkin season and I'm going to take full advantage of it. So, we ended up making these pumpkin spice crepes filled with a lightly sweetened cream cheese mixture. Yum! One of my wonderful cousins is a pumpkin spice fanatic just like I am, so I know she's going to have to talk my dad into making these sometime for her too! Sick'em Sam!...

Pesto, Spinach & Sun Dried Tomato Stuffed Sweet Potato (Crock Pot)

I've been a huge fan of cooking my potatoes in my crock pot for a good while now. It's a trick that I picked up a few years back and tend to use it when I'm feeling particularly lazy; being slammed by another good storm this week, I was just that. When it rains, it pours.

So, I decided to use this crock pot trick once again with making these amazing stuffed sweet potatoes. What I like most about cooking my potatoes this way is that they are entirely hands off, they don't really get 'over done' or 'under done', and I don't have to heat up my house with the oven being on...

I love my coffee. I seriously couldn't imagine a morning going by without a cup of my favorite joe to pick me up and get me moving through my day. This morning I was feeling even more indulgent and decided to take my morning coffee to the next level by pairing it with some delicious and decadent quick Raspberry Sweet Rolls.

These aren't your ordinary plain-jane sweet rolls either. Not only are they super easy to whip up with a handy-dandy little trick with crescent rolls, but I also amped them up by adding a cream cheese mocha drizzle over the top as the hero of the show.

Trust me, these aren't nearly as much of guilty indulgence as you might think either - just a perfectly awesome mocha filled sort of indulgence...

Now that we're over the torrential rain here for a while and the sun has peeked back out from behind the dark and gloomy clouds, it's starting to warm back up here in Texas! I think it's been about a month (if not longer) since I last saw the sun like I've seen it today.

I'm so happy to be getting back into the swing of summer foods, though I know in a couple of months when it starts tipping the thermostat at 100+ degrees outside, I'll be singing an entirely different tune.

For me homegating is the way to go with any sport. Who doesn't like tailgating from the comfort of home? It's the best of both worlds!
