Adult Pigs-in-a-Blanket with Red Wine-Mustard Sauce

June 10, 2016 Amanda Plott

When I think of summer, I often think of the thrills and fun things that go along with being a kid again without really being a kid again. So, to savor the summer I decided to take one of my old childhood favorites and make into something meant for a more adult crowd.

Enter these adult pigs-in-a-blanket! I've taken a spicy cajun style sausage and baked in the center of crescent roll 'blankets', and paired it all with a red wine-mustard sauce for a perfectly disable bite that's sure to impress!...

5 Ingredient Skinny Summer Vegetable Dip

June 8, 2016 Amanda Plott

It's getting warm here in Texas, though I'll be the first one to say that so far we've had a perfectly mild summer. Usually by now we are well into 100+ degrees days, and so far we've barely broken past the 90's. No, that's not a complaint either! It's these perfect summer days that I love to spend out in my backyard entertaining. Whether that means my little family or the whole lot of us.

No matter who's around, it's always about 'what to eat' and this 5 Ingredient Skinner Summer Vegetable Dip is the perfect spread! I've loaded this dip up with bell pepper, jalapeño (for taste - not heat), sweet summer corn, and olives! I know, bare with me, it might sound like a rather creative and interesting combination... and it is! It's completely amazing and full of flavor. You'll fall in love from the first taste...

5 Ingredient Roasted Red Pepper Hummus

May 23, 2016 Amanda Plott

Another busy weekend behind me and I couldn't be looking forward to next week anymore than I am! My little girl will be out of school and done with her dance for this season; giving me a much needed little break. With the last few days, weeks, and months all blurring together, I needed something easy and light to toss together after milling around the store today for my weekly shopping trip.

I decided some homemade hummus would hit the spot perfectly. I've made my share of hummus before, but hadn't yet dabbled with a roasted red pepper variation which happens to be one of my favorites to buy...

Healthified Crock Pot Beef & Broccoli

May 20, 2016 Amanda Plott

So, as you can see I'm busy blowing the dust off of some of my older and more popular dishes. I've been making minor changes and updating pictures along the way as I've needed to. Of course, Beef and broccoli is one of those things that is always a crowd pleaser. It's certainly one of my favorite asian dishes!

That being said, it's likely that a serving of it at your favorite local restaurant will cost you a good 600+ calories, a lot of sugar, and even more sodium. Yikes!  No thanks...

It's take-out fake-out time...

Corned Beef Breakfast Hash

March 18, 2016 Amanda Plott

Now that St. Patricks day is over, the big question is... what do you do with all that leftover corned beef? Well, here is one of my favorite breakfast ideas that will use up that salty beef goodness while also soaking up some of the party from the night before.

There is more than one reason to stay away from the green beer!

This breakfast hash is quick to cook up and gives you all that needed carbs and protein to get over any amount of Irish celebrations. It's definitely a hearty and filling dish that couldn't be any more perfect as a post St. Patty's Day breakfast or brunch...

Skinny Beet Pesto

January 6, 2016 Amanda Plott

You're wanting me to... beet it, beet it!

Lettuce turnip the beet and dance.

I'm dropping fresh beets, yo.

Okay, okay. I'm done with the beet puns and word-play for now. But, seriously - this beet pesto is amazing, easy to make, and super versatile too! Plus, I mean... look at that color. With Valentine's Day creeping up on us already, this would be a perfect thing to make and use around the day of love.

This beet pesto is full of flavor too; it's a little sweet, a little earthy, and super delicious. I recently this year became a beet fan, so I've been trying to come up with fun ways to use them. Especially with February coming up, beets are the perfect natural red and/or pink food coloring...
