My little girl is a busy little bee! Phew! I never realize that more than when she's home with me for long bouts of time (like during the summer.) There are a handful of recipes that I have been developing off and on through the years for one reason or another. Skinny Chicken Lettuce Wraps

It's Take-Out Fake-Out time again!

Anyone who has ever been to any asian inspired restaurant will know what these are. It's something that I will always order from one of my favorite asian eateries. Chicken lettuce wraps have become a staple at such restaurants and for good reason too! These perfectly crisp and tasty lettuce cups are light enough to be served as an appetizer and yet filling enough that you could eat them as a meal.

They are rather versatile too! If you're wanting more heat, add some chili sauce or Sriracha. Need some more salt? Add in a touch more soy sauce.

I have to admit, I was a little apprehensive at trying my hand at these. My dad had made these a handful of times several years back, and to my recollection it took almost an hour of him dicing and slicing ingredients. Yikes! These though? Nothing like that!...

Skinny Italian 'Fire Sticks'

Here is another healthier take on a favorite 'take-out fake-out' or restaurant 'copy cat' kind of recipe. There's this chain Italian style restaurant that serves these amazing 'Sicilian Fire Sticks' (or at least they used to the last time I went there - well over a year ago now.) They were always one of my most favorite things to order.

These fire sticks are large and in charge and full of flavor. And considering that one of my complete fire sticks is less calories than the original restaurant's tortilla alone... I think I'll stick to staying at home and making these for myself.

For those of you that aren't familiar with what a fire stick is, it's basically an Italian version of a flouts or taquito. A crispy tortilla surrounding a yummy mixture of meats, pepper, and melted cheese...
