For me, this week has been all about Tex-Mex flavors. Seriously, I think nearly every meal aside from breakfast so far has been Tex-Mex inspired, and today was no different! Guacamole Wonton Bites

If you haven't noticed, I've been a little avocado obsessed lately. And these guacamole wonton bites are no exception. While playing around with wonton wrappers the past couple of weeks, I thought it would be fun to stuff them with something other than the usual. So, I decided to do a little bit of fusion.

I have come to find that wonton skins are the perfect vehicle. They are light and crispy... sort of like a tortilla or a chip, but much more versatile. These handheld little bites of awesome are full of flavor, and it all starts out with a super simple homemade guacamole...

Skinny Italian 'Fire Sticks'

Here is another healthier take on a favorite 'take-out fake-out' or restaurant 'copy cat' kind of recipe. There's this chain Italian style restaurant that serves these amazing 'Sicilian Fire Sticks' (or at least they used to the last time I went there - well over a year ago now.) They were always one of my most favorite things to order.

These fire sticks are large and in charge and full of flavor. And considering that one of my complete fire sticks is less calories than the original restaurant's tortilla alone... I think I'll stick to staying at home and making these for myself.

For those of you that aren't familiar with what a fire stick is, it's basically an Italian version of a flouts or taquito. A crispy tortilla surrounding a yummy mixture of meats, pepper, and melted cheese...

Skinny Spinach Stuffed Mushrooms

I got this lovely bottle of Gloria Ferrer Pinot Noir that I've had sitting on my counter and staring at me for a couple of weeks now. I've been pondering over what exactly I wanted to pair with it. With the holidays still in full swing, I thought it would be the perfect time to whip up another tasty and better-for-you appetizer that would be perfect for entertaining; sure to make your next elegant holiday party sparkle!

One of my most favorite things to pair with pinot noir is the earthy flavors of mushrooms that only bring out the brambly flavor of this red wine. Many few years back I had started making these spinach and cheese stuffed mushrooms, so I knew that they would be the perfect partner to my pinot noir....

Skinny Turkey 'Pigs in a Blanket'

I'm not the world's biggest football fan. Okay, not a fan at all. But, I love my Longhorns (Hook'em!) and I adore the Superbowl, though If I'm being honest... it's mostly for the commercials, camaraderie, and food! Yes, yes, yes! I love, love, love game day food! I couldn't tell you exactly why either, but I think it has something to do with the fact that it's all snackable little bites of finger foods.

There's just something really awesome about eating tiny food. Maybe that's the girl in me. Or... the kid in me.

Anyway, every year when the big game rolls around I always love to try my hand at healthifying and/or making traditional game day foods both skinny and delicious.

Today, I'm going with 'pigs in a blanket' which of course is usually made using little pork sausages; giving them the 'pig' in 'pigs in a blanket'. However, turkey sausages are healthier and have a lot less fat and calories to them.

So does that make these... 'gobblers in blankets' or... 'turkey in blankets'?...

Skinny Faux 'Fried' Tomatoes

I'm a southern girl. You know, the born in Texas sort... It's not an uncommon place to find fried anything all around you here in the Lone Star State. I mean, have you been to our State Fair? Eek gads, man! Even so, I've got to be honest here. The only thing I care for at all that is fried would be french fries, pickles, and of course... tomatoes!

As you can imagine, fried tomatoes (especially green ones) were once a common place and a staple to southern food. Now though? You're hard pressed to find a single place in a giant city that fries them anymore.

A couple months back I was venturing out and trying a newly opened movie theater over closer to my mother's end of the world here in Austin. I don't know about you, but from what I remember, back when I was a young girl your options at movie theaters were fairly limited. I'm talking hot dogs, pop corn, soda, and an array over overly priced candies. In today's world though, the most of the movie theaters that I go to are all about beer, wine, and gourmet foods! This particular place was no different, featuring an amazing wine selection and beautiful food options that put those old-time hot dogs to bed...
