Everything Omlettata

January 29, 2016 Amanda Plott

Breakfast. ...The most important meal of the day, and for me, often the most overlooked one! Honestly, I have to sometimes trick myself or lure myself by way of new and interesting breakfasts just to get something in my stomach. Somewhere between my own busy ways and the chaos that rains down on the house with getting my kindergartener out the door, breakfast can easily get lost in the shuffle.

This week, I made it pretty easy on myself. After my delicious Skinny Cheese Omelette last week, I knew that I wanted to stick in the same theme. However, to make this all even easier I decided to try out an omlettata. No flipping, folding, or being delicate required!...

The Big Game is getting ever nearer and I am super excited, just as I always am! Game day food is a huge part of my love of sports. I mean... let's face it, who doesn't like finger-food style stackable grub? I feel like I've been lacking a bit this year with my game day offerings, so it's time for me to get back into the swing of it!

One of my favorite and must-have things for a game day spread in my house is dip. Cold dip, hot dip, any sort of dip that you can scoop up and nosh quickly while cheering on your favorite team. It's not like you can have your hands full of forks and plates in the midst of all the hoopla that tends to come along with uber fans...

"Omelette du fromage!" - Dexter, Dexter's Laboratory

So the grammatically correct phrase is actually "Omelette au fromage!" but, it's supposed to be funny and it's in a cartoon after all.

This week as been super busy as I've been preparing and trying to get ahead of myself so that I could take this coming weekend off without any hesitation. Yes, I'll be road tripping about three hours away to visit family and I just can't wait!

Funny enough, it's been a week full of breakfast foods for one reason or another. I suppose that's a good thing since I've honestly been slacking in the breakfast department for a while. It seems like if there's one meal I miss out on, which I know that I shouldn't, it's breakfast. So, I went diving head first into it...

Mexican Cottage Cheese Stuffed Avocado Salad

December 21, 2015 Amanda Plott

This week I wanted something quick and easy for my lunches since I knew that with the holidays coming up I was going to need as much time open as I could manage to get! Light and filling salads have been my go-to lunch time meal lately. But, of course I can't have just any salad. And anything with avocado is a bonus in my book.

The idea for this stuffed avocado salad came from my Skinny Mexican Style Avocado Caprese salad that I did a good while back. That too is one of my favorites! However, I wanted something a little different this time around and cottage cheese was calling my name...

Skinny Nog Pecan Blondies & Nog Cream Cheese Sauce

December 8, 2015 Amanda Plott

As we're getting into the thick of the holiday season, I wanted to step out of the box again and create a lighter take on one of my most favorite desserts in the world, a blondie! Any blondie just won't do. It had to be full of pecans, white chocolate, spice, and topped off with a decadent cream cheese sauce.

Yes, I went there. And I brought my 'Egg Nog' with me.

I wanted this blondie to have more of a holiday twist, so I infused with the flavors of egg nog while omitting (most of) the guilt. I am all about small indulgences, especially around the holidays...

Broccoli Turkey Cheese Pretzel Pockets

November 24, 2015 Amanda Plott

I've been working hard for the past few years with coming up with interesting ways to use up that leftover turkey from Thanksgiving. One of my most recent favorites was this Skinny 'Leftover' Turkey Salad, and one of my favorites from years past was the Skinny Turkey & Wild Rice Soup.

I still have another idea that I plan to have up some time after Thanksgiving, but I must say that this Broccoli Turkey Cheese Pretzel Pocket will be hard to beat!

What's better is that this Pretzel Pocket is easy to make and de{light}ful for both kids and adults. I mean, who doesn't love a soft pretzel that's been stuffed with turkey, broccoli, and oozy-gooey cheese?
