Vegetarian Pumpkin Curry

I've been craving curry of all types lately. I'm not exactly sure why either. Perhaps it's the change in weather that's increasing my desire for something warm and spicy. I attempted to make a green chicken curry last week but was not exactly a fan of the overwhelming amount of spice-heat that came from it. Yikes! It's a recipe that is definitely a work in progress.

This week I decided to go with a red curry, which is generally what I order when out at any thai place. I think red curry is generally a little less spicy than the green, but that also depends on how much of what curry paste or powder you put in.

With pumpkin season in full swing, I thought this would be the perfect opportunity to use up some nice pumpkin puree! I've added it to chili before... so why not curry?...

Mashed Avocado & Chickpea Sandwich

Crock Pot Red Curry Lentils

I have a confession to make... I've never cooked with lentils before!

Okay, well... I have. I did cook with them when I was attempting to make this same meal a few weeks ago and somehow managed to do something wrong and ruined the entire crock pot of curry. Ugh. Live and learn!

I guess what I should say is that I've never successfully cooked with lentils before. I have eaten them before, but it's always been in soups and never as the 'star of the show'. I knew from the soups that I'd had, that I did like lentils and have been looking for an excuse for a while now to use them...

Healthy Veggie Wrap

I've had this wrap at the back of my mind for quite a long time now. It has been suggested to me more than once that I should post a 'wrap' friendly lunch (thanks, mom!) I'm trying to cut out some of the meat in my life this week; eating cleaner and leaner in the process.

I'm going a little Mediterranean here!

This wrap is definitely full of good stuff. Once again, we're eating the rainbow, which is never a bad thing.

Well, unless it's in the form of candy... and even then it's debatable!

Butternut Squash Faux Fries

These baked Butternut Squash Faux Fries are an amazing alternative to their potato brethren. They taste just as amazing as sweet potato fries, and are remarkably similar, but come in way less on their calorie count!

Not to say anything bad  about zucchini, but the health benefits of winter squash far exceeds that of their summer time family. The butternut squash is high in fiber and low in fat, making it a very heart-healthy choice.

This fruit  is full of potassium, B6, folate, and last but not least carotenoids! A 1-cup serving will give you nearly half the recommended daily dose of antioxidant-rich vitamin C. And what's more? It's an anti-inflamitory as well...
