Ah, greek salads have to be one of my most favorite salads. In fact, I was so set on them that I burned myself out for a good year or two. Sad. I know. How can you burn yourself out on a favorite thing? Well, easily if you eat it every day for nearly half a year!

Skinny Jalapeño Pimento Cheese

I know, I know... there's a lot of people out there (mostly in the northern states), that don't have any idea what pimento cheese is - nor what they are missing out on with it not being in their lives!

I've made a Skinny Pimento Cheese before, but I always wanted to go back and make a spicy jalapeño version of it because... well, I love spicy stuff. Besides... what goes better with cheese than jalapeños anyway?...

After a weekend of cake filled preschooler birthday I felt like I needed a more 'grain free' breakfast this morning to let my body settled and readjust itself. I wanted something light but filling enough to hold me through my morning.

Spring is in the air. No lie. It was 86 degrees F here just yesterday. My favorite thing about this time of year? Lemons! Oh, lemons... they make me so happy. I don't think there is another fruit out there that is more bright, fun, and sunny. What a versatile little yellow treat. Morning, noon, or night - there's always a recipe to use it in!

This dip or sauce (depending on how you use it) packs a punch with it's bold zip of flavors. So few calories for so much taste...
