Mango Pineapple Chamoy Popsicles

This is the last week of school here and whether we like it or not the hotter weather is coming! I’m already preparing by making these Mango Pineapple Chamoy Popsicles! I’ve made some mango chili popsicles in the past, but I wanted these to have a bit more spice and some chamoy flavor too!

Although I didn’t do it today, you could add a little something something to these to spike them too. But, for today I kept mine clean. The chunks of fresh pineapple and mango in here along with the Tajin are perfection. Plus, I love that I get to control how much heat goes into these things too…

Crispy Roasted Beans & Whipped Feta

This Crispy Roasted Beans & Whipped Feta is possibly my new favorite appetizer or snack that I’ve come across in a good long while. No only are the beans seasoned up just right, the whipped feta is on point. The two together make for one of the most tasty snacks there is. I used Cannelini beans here, but butter beans, lava beans, or any large white bean will work here. The larger the bean the better for the dipping.

When I say that the beans are seasoned well, I mean they are seasoned well. There is a lot of garlic and onion per capita here. And the fresh rosemary being baked with them? Mm-mm! You can’t go wrong here…

2 Ingredient Cookies

I didn’t think it could be done, but yes - cookies can be made with a mere two ingredients. These 2 Ingredient Cookies are super east to make, because it’s just two ingredients, and they’re great as a snack, or even for part of a breakfast or lunch. So what are the two ingredients? Oats and banana. The oats do need to be quick oats and the banana has to be overly ripe. Other than that? There’s nothing more to them!

There aren’t any tricks to these cookies. They do end up being vegan, vegetarian, dairy-free, low fat, and bunch of other things that make them into not only one easy cookie, but a healthy one too. I’ve been enjoying mine as part of my lunch with apple slices, peanut butter, and some other snacks treats…

Thai Curry Coconut Soup

If you’re looking for a quick and easy dinner that has a kick of spice in it, look no further. This Thai Curry Coconut Soup is gluten free, meatless, vegetarian, and even vegan if you use a vegetable stock instead of chicken stock. One of the best parts is though that it’s all made in one pot and in less than 30 minutes too. It’s rich and full of flavor while also being completely guilt-free.

I found this soup to be perfectly filling without making me feel overly stuffed and it’s light enough and yet hearty enough to be enjoyed at any time of year, spring, summer, winter or fall. You can change up the veggies in it too. I went with peas because I had some that I needed to use up, but edamame, zucchini, anything really would work here…

Wild Berry Pop Tart Bars

I don’t know about you, but I grew up eating pop tarts. One of my favorite flavors has always been wild berry. So when I decided to turn them into cookie bars, I knew I was going to have to do them in a bright and colorful wild berry version. I started these bars off with a sugar cookie style dough, and being as it’s a take on pop tarts, I wanted to make them a sandwich style of cookie bar.

So the mixed berry jam is sandwiched in between two layers of sugar cookie like dough and then all topped off with a bright and colorful frosting that’s made to look like the original variation of the wild berry pop tarts…

Dill Pickle Pasta Salad

So… just hear me out. Pickle flavored stuff has kind of become the trendy thing these days and let me just say, I don’t mind it at all. I love me a good pickle. Dill pickle that is. None of that sweet bread and butter nonsense. This Dill Pickle Pasta Salad is pretty amazing. It’s light, tangy, and super easy to make too.

I know it might sound a little weird at first, but I promise it’s one of the best pasta salads I’ve ever had. And I’m southern so I’ve had a lot of different kinds of pasta salad. I lightened this pasta salad up and made it a bit better-for-you but first subbing in a whole wheat pasta. I also kicked the sour cream out and used a plain fat-free greek yogurt instead.
