This Extra Cheesy Baked Macaron is made all in ONE PAN and is tossed together to bake up in the oven in just over half an hour. The best part is? Huevos Rancheros Casserole

Huevos Rancheros is a traditional Texmex dish that’s usually served for breakfast or brunch… or maybe even lunch. It’s a little bit like a breakfast taco in that it involves tortillas and eggs, but it also usually has ranchero sauce and beans too. This morning I decided to make it into a casserole instead, and let me just say… it was the right decision!

Dill Pickle Chex Mix

It’s been a while, but I had seen this idea a while back now for a pickle flavored chex mix which I’ve got to be honest, really intrigued me. I like pickles, and I like chex mix… but would I like them together? As it turns out, I do! As is usual with chex mix, this one starts out with - you guessed it - chex cereal. I went with corn, but you can really pick wheat, rice, etc. Whichever base you want to start with.

Then we’re adding in other tasty bits like cashews, pretzels, and even some bagel crackers. You can use bagel chips/crisps, but I couldn’t find any of those to save my life, so I went with some small round bagel inspired crackers that I found instead. Broccoli Cheese Twice Baked Potatoes

The russet potatoes are HUGE here right now and I love getting to play around with them to use them as more of a meal than a side, and the bigger ones allow me to do that more easily. I was also really vibing with broccoli and cheese so I thought I’d put the two together. These Broccoli Cheese Twice Baked Potatoes are so big that they could definitely be used as a meal in themself which is basically what I ended up doing.

They also can be made ahead of time and then put through the final bake when you’re ready to enjoy them. I had planned to end up with two servings, but they were so big that I opted to go with twice baked rather than just a loaded potato. So I cooked two up for dinner one night and saved the other two for lunch the next day…

This Cheesy Cauliflower Pizza Casserole is the best of both the world of pizza and the world of eating better. It’s cheesy, saucy, easy to make, and delicious too! Another good part is that you don’t need many ingredients to make this casserole either.

You can also customize this casserole to suit your specific pizza tastes. I went with turkey pepperoni since it’s just as good as any pepperoni but has fewer calories, but you could also go with jalapeño, olives, sausage, etc…

A day late, but we’re going to blame it on the Holiday. Today I have for you, this English Muffin Loaf! It’s an english muffin in the form of a loaf of bread. It’s sliceable and yumable just the same as an english muffin, except you don’t have to tend to it like you would if you were making homemade english muffins.
