Summer lovin' happened so fast...

This salad was inspired by the one served at a local Mexican Restaurant that I first went to a few years back now. I was first introduced to the salad while at lunch with my Sister-in-Law and Aunt. I think it was of the best salads that I had ever eaten. And that's saying a lot since I have eaten my fair share of salads over my lifetime.

I've haven't been back to that restaurant in a good long while. Maybe that's because a couple of years back I cracked the code on their salad!

Vegan Queso

This is it, people. This is what we've been training for. ...Happy Cinco de Mayo! In honor of my most favorite excuse of the year to eat Mexican food, I decided to make a Tex-Mex 'must have' into the ULTIMATE vegan bite of goodness.

While it's been warming up here in Texas, for the past few days the skies have finally decided to open up and give us a much-needed downpour of rain. It's perfect timing too as the bluebonnets and other wildflowers have just begun to pop up, and now we'll likely get even more!

With the Big Game coming up tomorrow I thought I needed to get another good game day recipe out. These Low-Carb Chicken 'Nachos' have been something that I've been working on for a month or two now, trying to get the spice level right and the cooking method down perfectly.

These Chicken 'Nachos' are really more of Chicken 'Not-Chos' since there is no chip involved here. Instead, the entire nacho is based on the pieces of chicken themselves. To pack in as much flavor as possible, I started these off with seasoning. A LOT of seasoning too. Let's face it, chicken breast can be a little moot. My mom has this infamous chili recipe that she's made for many years now. It's something that the whole family can agree on. We all love it. It always became a staple in the family's weekly meal plan during the cooler winter months.
